I've got thawed ground beef. Its chilly. I want some soup.
Taco soup is out. Vegetable beef is also out.
Other easy options that don't take all day? And are filling, and work with a slab of homemade bread?
HELP!

Albondigas (meatball soup)
1 1/2 lbs ground beef
1/4 cup flour
2 eggs
~ 10 cups chicken broth (or combo chicken/beef)
1 tsp oregano leaves
2 med. onions - chopped
red chile flakes to taste (or ~ 2 tsp chili pwd)
6 carrots finely sliced (~ 1.5 lbs)
1/4 cup rice
1/4 cup fresh cilantro (dried works.. dried parsley also works)
3/4 lb spinach (I usually omit)
1 can ~ 14 oz chopped tomato
combine meat, flour, eggs and 1/2 cup broth (or less. I'd only use what was needed).. in a soup pan bring remaing broth and spices to boil. reduce heat to low.. quickly shape meat mixture into balls about 1 1/2 inches in diameter; as you shape them drop into the stock. Simmer meatballs uncoveres for 5 min. then spoon off any fat and foam from surgace. add other ingredients except spinach. simmer uncovered for 20 min. until carrots and rice are cooked. Add spinach and cook uncovered 5 min. longer. Can serve with a bit of lime to squeeze into individual servings.

Sorry, too late to use today, but here are a couple soups we enjoy:
Cheeseburger Soup:
Brown Ground Beef
Add a can or two of beef broth, chopped onion, sliced celery, shredded carrot, several diced potatoes. Bring to boil, then simmer until all ingredients are tender. Add a couple cans mushroom soup, a can of milk and a few dollops of sour cream. Season with dill, ground bay leaf, garlic and onion powder, garlic pepper blend, salt & pepper. Stir in 8-16 oz. shredded cheese (cheddar is really good), until melted and smooth. Top with bacon bits or stir them in. (I use lowfat sour cream, skim milk and lowfat soup for this recipe and it tastes fine)
Poor Man's Beef Barley:
Brown Ground Beef (you can substitute any chopped beef; I've used cut up steak or roast when we've had it)
Add 2-4 large cans of crushed tomatoes, (add a can or two of beef broth if you like your soup more liquidy), diced onion, shredded carrots, basil (I like to add a little sugar), garlic and onion powder, salt & pepper. Bring to boil. Add barley and simmer until barley is tender. (I find it much cheaper to buy barley in bulk at a local Amish store, than to buy it by the box in the grocery store, but it takes a little longer to cook)
Both these soups take less than half an hour prep, but perhaps an hour cooking time altogether, including simmering. We like to serve homemade bread or cheddar bay biscuits with either.
BTW, I was having trouble with creamy soups or thicker soups sticking at a certain point, when they get close to being finished. I finally figured out that putting the pot in the oven at that point (set on warm temp or about 170 degrees) keeps the soup from sticking, but allows final simmering without sticking or burning.

I made cheeseburger soup once, and DH hated it. SIGH.
I made up a new soup, lol. It's called "empty leftovers into the pot, add beef stock, and cook" LOL.
I browned the ground beef with some onion, put in 8 cups of stock, a couple of spoonfuls of tomato paste, a can of cream of mushroom, diced up a small can of button mushrooms, threw in all of the thinkly sliced, oiled and seasoned potatoes DH made the other night (really tasty, but they mostly stuck to the foil, lol--came off easier last night), a can of diced tomatoes...salt, pepper, parsely flakes, granulated garlic, some cayenne pepper....VERY tasty.
Add some fresh, hot sliced bread with butter...?

Yeah. And I forgot, I added some pre-cooked bacon (Made extra on Sunday and DH had me put it into a baggie in the fridge, so we could use it for sandwiches or something). Chopped it up, tossed it in while it was cooking. GOOD STUFF. And the longest part was browning the ground beef, lol. And waiting on the bread to bake, lol.
I almost threw in the last of the baked potato soup, but it didn't seem like a creamy based soup like that, might not blend in so well.
