How do you enjoy fresh/frozen cranberries? I need to clear them out of my freezer!

These recipes, to include cranberry bread and cranberry pie have been shared here.

My sister shared this cranberry orange cookie recipe with me - YUM!

I just made bread pudding and added frozen cranberries instead of raisins. I also make my own cranberry sauce.

Tell more!

Love,

I like cranberry orange scones.. do I have a recipe or do I wing it? I thik I have a recipe.. ah ha!

I even had it on the computer

Quote:
cranberry-orange scones

1 3/4 c flour
2 1/2 tsp baking pwd
1 tbsp sugar
1/2 tsp salt
6 tbsp butter
2 eggs
1/3 cup milk
1 tbsp grated orange zest
1 cup coarsely chopped fresh or frozen cranberries
sugar to top the scones

Preheat oven to 425*. Grease large cookie sheet. In medium bowl with fork, mix flour, baking pwd, sugar and salt. With pastry blender or 2 knives used scissor-fashion, cut in butter until mixture resembles coarse crumbs. In cup with fork , beat eggs; reserve 1 tbsp. Sir milk and orange zest into flour mixture until well mixed. Fold in cranberry just until distributed. Turn dough onto lightly floured surface; with floured rolling pin , lightly roll dough 1/2 inch thick. With knife cut dough into 3 inch squares, cut each square into 2 triangles. With pancake turner, place triangles 1 inch apart on cookie sheet. brush with reserved egg and sprinkle with sugar. Bake 10-15 minutes until golden. Makes 10-12 scones

For St. Valentine's Day I will use a heart cookie cutter instead of making triangles.

Ooooooooooo yum, Jodie!

No, Jennifer, as-is. But there are similar recipes that don't use almond extract - I think the almond flavor bumps it up a notch.

Love,

That's what I like, too, but looking for new ideas as well.

This is my husband's favorite. Now he says I make it better than his mother...but don't tell her he said that.

Cranberry-Orange Nut Bread

4 cups flour
1 1/2 cups sugar
1 Tbsp. baking powder
1 tsp. soda
1 tsp. salt
2 eggs, beaten
1 1/2 cups orange juice
1/2 cup salad oil
2 cups cranberries, halved
1 cup chopped nuts
2 tsp. grated orange peel

Preheat oven to 375 degrees F. Blend together dry ingredients in mixing bowl. Combine egg, juice, and oil; add to dry ingredients, stirring until just moistened. Stir in cranberries, nuts, and peel. Pour into 2 greased and lightly floured 9 x 5 x 3 loaf pans. Bake at 375 degrees F. for 55 to 60 minutes or until wooden pick inserted comes clean.

Cool on wire rack

Oh for Pete's sake...lol. I hit the wrong button and it all disappeared...

Okay. First up, homemade cranberry sauce. We made ours (and canned it!) the night before Thanksgiving. Made ours with additional orange zest and some raspberries. Delish. Youngest dd likes it on toast. Seems like it would go very well on an English muffin...

Cranberry Sauce

Next up, sugared cranberries. Be forewarned, some folks will lick the sugar off and leave the berry. My dad, however, loved them, and we sent him home with a big container of them to enjoy.

sugared cranberries

HTH!

Rachel

that's right, Rachel...you posted these at the retreat and I thought "YUM!" Thanks for reposting.

I made something close to this slow cooker cranberry sauce...but thought the exterior of the cranberries came out tough...I may try it again sometime but not cook as long. In the mean time, I'll stick with my regular stove-top recipe, like yours, Rachel.

I just found this salad dressing that I may try this week.

Love,
