I am looking for a potato recipe for Christmas. We are going to my SIL's home, and mashed potatoes don't travel well, especially since we are eating later than we will be going there. Is there some kind of bake-in-the-oven potato recipe that would be easier to bring? In my head, I picture a 9x12 pan, maybe with some cheese? Am I thinking of scalloped potatoes?

I know you all are so good at this. Thanks so much in advance!

I make twice baked potatoes out of mashed potatoes.. just mix in your sour cream and cheese or whatever.. spread in a baking dish (a 9x13 pyrex works nicely) and then when you get there you can bake it in the oven and it just has to get hot.

This is our yearly treat - sooooo bad for you - but, hey, it's Christmas!

Gourmet Potatoes

8-9 medium potatoes
3 cups shredded cheddar cheese
6 T. butter
2 cups sour cream (room temperature)
1/3-1/2 cup chopped green onion
salt and pepper
2 T. butter

Bake or boil potatoes in skin, cool and peel - then shred potatoes. (We usually do by hand with a cheese grater, but I'm sure there's a better method.) In a saucepan over low heat, melt cheese 6 T. butter. Remove from heat and mix in sour cream, green onion, salt, and pepper. Fold mixture into potatoes. It usually looks like a dreadful lumpy mess at this point, but have faith! Mix as best you can, and spread in a 9x13 dish. Dot with 2 T. butter and bake at 350 degrees for about 30 minutes.

We make those, too, Tracy! We call them "heart-attack potatoes"! But they are SOOO good, and everyone loves them (what's not to love?)

We make roasted potatoes. Basically cut up potatoes, liberally covered with olive oil and a few packages of onion soup mix. Yum!

I do scalloped potatoes and they travel very well:

Peel 4 large baking potatoes and slice thinly. Set aside.

Make a roux with 2T butter and 2T flour.

Slowly whisk in 1.5 cups milk and let cook to thicken slightly, stirring often. Then add 3/4 tsp. of salt, pepper to taste, and 5 ounces of shredded cheddar cheese.

Layer in greased casserole dish, alternating layers of potatoes and cheese sauce (ending with sauce). Sprinkle 1 ounce cheese on top. Cover and bake at 350 for 1 hour, 15 minutes.

That's what I was thinking you have in mind, scalloped potatoes. Definitely fitting for your in-laws!
