Good Afternoon Ladies!

I am a bit neurotic this pregnancy and planning/organizing everything I possible can. I am not due until January 2011. However I guess with the holidays upon us, I thought I would start planning things out now.

With that said, we are planning on a January 30, 2011 baptism for our DC # 3 (baptisms take place at 2 p.m.). We will host a gathering/celebration at our house afterwards for all family, friends, and guests - there will be several people here, but not a huge number - maybe 20 MAX.

So here is where I need your help and suggestions. What should I serve that will be hearty and filling? AND easy to prepare/pull together ahead of time?

Any and all suggestions/advice are welcome. Thank you in advance for your help - I always look forward to hearing from you all.

I've served soups before.. 2 soups in crockpots make it easy to have them ready to go when you're not there.. maybe some sandwiches and/or sliced bread/crackers/chips.. a fruit platter and cake. coffee and punch.

I did a pot of Posole (mexican hominy soup) and Chile Verde (green chile stew).. my dh grew up adding the chile verde to the posole.. the chile verde is made very spicy and the posole mild.

But anything favorites would be good.

Love the idea of using crockpot(s) in order to pre-make and keep warm!!!! Any other suggestions on a menu?!?!?!?

My favorite make-ahead is BBQ Beef/Pork. You can make it a day or more ahead (freeze if necessary) and then keep warm in a crock pot when you are ready to serve.

This with a salad and one additional side (potato fries, potato chips, sweet potatoes) and you have a very nice meal.

How about baking a dessert every couple of weeks and freezing it? Like Rice Krispie Squares, then cookies, then brownies, etc.

You'd be surprised how many you have come the Baptism

We had a baptism on Dec. 23rd for our 5thds. I made up lasagnas the day before, and before we left for Mass, I put them in the oven, a bit lower than the regular temp. When we got home, I just threw on the other cheese, turned up the temp., and they were great.
I also had a large salad, bread, and veggies/fruit trays. I think I always have veggie/fruit trays!

We always get a cake for the dessert and picked that up on Saturday.

For other baptisms, we have ordered subs. Those were easy!

We have done the freeze ahead sloppy joe thing. It warms up good in the crockpot. Baked beans in the crockpot. (if I was doing it myself it would be storebought, but my grandma usually brings homemade in a crockpot and I have the recipe if anyone wants it..) Chips, veggies, fruit, and a storebought cake picked up the night before or morning of. We have done the same menu for a summer and late winter baptism. Both times we had 40+ people and it went fine.

I second the BBQ thought. I really like to make a crockpot of shredded BBQ Chicken a day ahead of a big gathering, and have either homemade bread or buns for sandwiches, depending upon time and finances. Chips, carrot sticks, midget pickles, some canned peaches or pears, some kind of dip for the carrots and chips, juice and a pan of brownies or cookies, all make a filling, rounded, easy meal. Easy is the key factor for me having a gathering after having a baby.

For the chicken BBQ my Mom used to make this recipe, and it is always a hit: BBQ sauce, enough to cover all the chicken well(We like Sweet Baby Rays, the large bottle or 2-3 small bottles should be good), ketchup about 1/4 the amount or less of the BBQ sauce used, and brown sugar to taste. I love having it in the crock pot and being able to get it going in the morning before heading out, and coming home to a yummy meal, all set.

We've actually started just having lunchmeat sandwiches with all the other sides mentioned above, and our friends all think it's a nice idea because it frees up the cooks to enjoy the gathering. Hope you have a wonderful and blessed day!

At our big baptism party we ordered subs, made crock pot mac n cheese, and I made deviled eggs. I also made several specialty breads in the bread machine ahead of time and froze them. We also had a veggie and fruit tray. I like veggie trays because when all the other food is gone people can keep picking at the veggies
