I just tried a super yummy gluten free, dairy free pudding. It's really simple to make:
1 avocado
1/4 cup cocoa powder
1/8-1/4 c honey
1/2 really ripe banana
water
Just mix it all up in a food processor or vita-mix /blendtec. If you leave out the water it's the consistency of frosting, but once you add a bit of water it magically morphs into this really decadent and rich pudding.
The recipe above makes 4 servings about the size of an espresso cup. I don't think you could eat much more than that size because all of the fat in the avocado makes it really rich. You could probably sub all the honey for really ripe bananas too.
I was shocked by how smooth it was. It's really just like a rich pudding. I'm serving them for snack this afternoon without telling them the secret ingredient just to see if anyone says anything. I have some whipped cream to put on top, but I tried it both with and without and I preferred it without.
1 spoonful is all you need to really feel satisfied and have a chocolate craving filled!

i ate bowls and bowls of this in the spring. SOOO yummy. only thing is i think i developed an avocado allergy, eating it so much.
have you tried avocado in a smoothie? that was my favorite smoothie in college.

Stef, is this a recipe from the Philippeans? I think I remember our priest taking about an avocado pudding...
I will have to try it because I love avocados.

Melissa or Stef,
What type of avocado works for this? I have a couple of trees in our neighborhood but they are the very large variety. Is this recipe good for those large ones or just the hass variety?

I'm not even sure what I used. I know there were the green ones and the black ones in the same bin at Trader Joes and I just grabbed whichever one was the most ripe! Sorry!

Melissa, I'm going to have to try this. My dh loves guacamole. I'm wondering if knowing there is avocado in something he'll enjoy it (as pudding is not something he normally eats) .

I must confess, I thought the headline a bit odd...but, now that I read the recipe, it sounds intriguing.
Might have to try some this weekend!
