I'm really getting into using my slow-cooker, but I'm at a loss for meal ideas. We don't tend to like most of the ones in Fix-it and Forget it, and I haven't found much else out there.

Can anyone share their favorites?

Okay - super simple. You need a package of little pre-peeled carrots; half a gallon of apple juice or apple cider; skinned/boned chicken breasts; salt,pepper,garlic powder; rosemary (I cut sprigs from my plants). Layer the carrots and chicken; sprinkle the chicken with the salt, pepper, garlic powder; lay rosemary between the carrots and chicken, and between layers of chicken (I should have said that before I had you laying the chicken on top of the carrots. ). Pour juice over all to cover. Cook on low for 6 or 8 hours, on high for less time, or on the stove top for maybe 1 1/2 hours. You can pour off some of the liquid into a saucepan and thicken it with cornstarch or flour to make a gravy. We usually serve this with a green vegetable and French bread. It's also my stand-by to bring to people who need a meal - tasty, mild, generally accepted by children.
