Inspired by the leftover oatmeal thread, do you have any ideas for leftover tortilla chips - you know the chips at the bottom of the bag that aren't total crumb but aren't big enough to dip or hold with fingers? We spinkle them on taco soup and chili but our supply is greater than the demand.

Angie -- use them on top of any baked casserole -- like baked macaroni, creamed tuna etc to give a crunch. They soften a bit if they're near melting cheese and they add a bit of corn flavor! Also, you could use them in lieu of croutons on salad or breadcrumbs for meatloaf.

I learned at the feet of the master -- my mom -- how to use EVERY bit of leftover! Problem was when we raved about something she could never repeat as we never had the exact same stuff leftover

Angie,

We make a chicken dish with leftover chicken, salsa, Velveeta cheese and tortilla chips. We basically mix all the stuff together and cook till cheese is melted. I'm not a great cook and this was probably one of my desperate moments - but dc like it. I must warn you - all mine like spicey from the 3yo on up.

we just had a Mexican Red Baron Pizza and it had crushed tortilla chips on top of all the other goodies, -- boy was it delicious, but I was distracted during dinner trying to remind myself to let you know how good that was!

This is basically what I was going to say....I have an Enchilada casserole that is layered with the meat mixture (hamburger, chilis, crm. mushroom, ench. sauce, hot sauce, blk. olives, gr. pepper) and crushed corn chips. A 9x13 pan usually uses up 1/2 a bag. I keep them in the freezer.

I love having chickens for just that reason. Especially for vegetable scraps that look too good for the compost pile; the chickens love them!

You all are the best! What I'm hearing is that I need to start doing casseroles. I might have to wait until next December when it turns cool again. I'll have plenty of corn chip crumbs in the freezer by then .

BTW, I miss Matthew's eggs, Mary Ann. Boy were we spoiled!
