Does anyone have a recipe that uses cooked oatmeal?
Muffins?
Bread?
We always have leftover oatmeal and I can't seem to consistently make the right amount for people's hunger levels.
For Lent my biggest goal is to waste no food, since that has become a bad habit here. I thought maybe there would be a good muffin recipe I could make for an afternoon snack with leftover oatmeal.
I read an article once where a Catholic mother ate her kids wasted food during Lent, but made less food so she didn't eat double. How often do we just scrape their plates into the garbage since its so picked over its "not really worth saving in the fridge?" That's a problem here. I thought this woman had a good idea that could be done silently, so your kids didn't feel like you were a vulture hovering to eat their food .

Great question, and a timely, thoughtful idea. I cringe at how much food we waste around here . I'll be eager to hear suggestions ...
Unfortunately, I don't have a recipe, but I remember once coming across a "Baked Oatmeal". I wish I could remember what you did to it first ... all I can remember is you used cold leftover oatmeal as the base and you baked it in an 8x8 pan, then cut it into squares. Anyway, it sounded really good ...
Could you use leftover oatmeal in meatloaf?

You can use it in pancakes and in bread or muffins, even if you've added sweetener and/or milk and butter to it. Just substitute it for some of the flour and milk in the recipes.

I throw the leftover oatmeal, if there is any , into any basic muffin mix/recipe. I just add extra liquid and maybe some dried fruit - makes lovely moist muffins.

I would LOVE a good recipe for Baked Oatmeal. We used to eat it at a camp I worked at in High School, and it was heavenly!
If anyone's got a tried and true one, I'd love for you to share it!

How about Oatmeal Scones? I wonder if you could use maple syrup instead of the honey ...
