is all rhubarb red? The reason I ask is that my neighbor gave me some today that she'd gotten from her son. she'd made a pie with some of it but had more than she wanted. I've never used it myself but wanted to try a pie since I've heard they are really good. After I got it inside and looked more carefully, only one of the stalks has the smallest area of red near the base, the rest are all green. I know the leaves are toxic (oxalic acid) and wonder if these green stalks are safe to try, or if there is a variety that doesn't turn red?

I've seen some that are not all red.. but more red than you're describing but I went and looked around online and apparnetly there are red and green and anything between the two. www.rhubarbinfo.com

it's a veriety thing... my rhubarb is almost khaki colored.
Rhubarb relish- awesome on grilled pork or chicken
slice a heap of rhubarb(maybe 6 stalks)
in a non reactive pan combine with a few teaspoons of grated ginger and about 3/4 cup sugar. Slowly heat up- this will let the rhubarb emit some liquid. Boil until thick. You can add golden raisins or finely diced red onion. and or some toasted walnuts (add at last minute- they go soggy) doesnt sound like much but it is yummy.
