Lovely day here, but we have a busy afternoon. Just going to make some tacos. We have to make them allergy free (wheat, dairy and egg free), so tacos is a nice way for us to add cheese and sour cream. We only do corn tortillas.
What's for dinner in your house?

"sort of" baked ziti - pre-cooked penne pasta, jarred sauce, shredded mozarella, layered in a pan, cooked in the oven (covered) for around 1 1/2 hours. Roasted asparagus; salad. This works well because I can set it up much earlier in the day, shove it in the oven at the right time, and ignore it. Then the asparagus cooks in about 7 minutes, while the cover is removed from the ziti so that the cheese on top can brown. And, even better, EVERYBODY ENJOYS IT!

I think I'm gonna do some sort of chicken with rice and corn.
I need to run out to pick up kids around 6:30.. so probably gone about 30 min. But need to have dinner ready at 7:30 so hopefully dh has time to eat between getting home from cubscouts and a conference call for Lacrosse Officials
so I'm thinking baking or quick frying and finishing in the oven.

Leftovers here--I have my 40-week obgyn appointment today, so hubby will be heating up the rest of the enchilada pie from yesterday, served along with salad and rice.

Just plopped a beef roast in the crockpot since it's a bit chilly here today (high on in the mid 60's and overcast). So we'll have a more wintery supper with beef, potatoes, carrots, etc. Probably make either green beans or green peas to go with it. Maybe some homemade biscuits (WW).
Dh is sure to love this meat and potatoes meal!

Dirty rice and veggies...I have had the brown rice cooking in the crockpot all day..it comes out really good this way...
...off to cook up the liver and sausage...
