we are trying to eat more meatless meals.

here's the catch...

allergies in the house include dairy, soy, and mushrooms.

wheat is fine.

tomato dishes are fine, but too many and my acid reflux kicks up.

and - i have a ds with PDD-NOS/Asperger's with major texture & sensory issues.

so many vegetarian cookbooks just try to replace meat with meat substitutes like tofu, etc.

it seems to me that there are enough real foods that are wonderful that i shouldn't have to do that.

but i am stumped. i need help, ideas, something.

got any great meatless meals that would work for me?

spices - according to taste.. here are some variations that work well:
             chili powder

             garlic cloves
             oregano
             a touch of cayenne

dice: one medium onion, 4 stalks celery. Then take that and your meat put it in a touch of oil in a skillet and brown.

In your soup pot put in a half a head of cabbage that has been sliced or diced, 2 cans kidney beans, 28 oz can of diced tomatoes (or equal fresh) that's the big fat can
or two regular cans, one 14 once (the normal size can) of tomato sauce, chicken broth, then your spices, and salt and pepper to taste.. but it really doesn't need much

then I dump the meat and veggies that you browned in and cook the whole thing till the cabbage is soft about 3 hours is good.. but 2 is usually ok and add water as needed.


pasta topped with a salsa type of dish with beans mixed into it.

hmmm how meatless are we talking? Maybe a better question is what's the purpose of having more meatless meals.

If it's just saving money, you can make soups with beef or chicken or turkey broth but not add any meat pieces.. or finely chop it up and have quite a bit less than otherwise.. Like I can make a rather nice hamburger and cabbage soup with only a half pound of hamburger and beef broth and carrots and cabbage and potatoes and onions

Egg plant can be a "meaty" veggie to add to soups and stews and casseroles or to bbq on sliced on the grill brushed with some oil and spices.

I stretch ground beef and ground turkey waaaay out by mixing with brown rice and lentils that I cook in broth. I use this mix for meatloaf, meatballs, taco meat, pasta sauce, casseroles etc.

I make alot of soup. The flavors can be jazzed up so easily. Black beans, salsa and corn chips for a Mexican flare, or mung beans and curry with a pita or oriental veggies and rice sticks with a splash of teriaki. And my kids eat beans more readily in soup.

Today's soup is a chicken base, with lemon, rosemary, celery, carrots and white beans. I puree half of the white beans to give it a cream soup consistancy.

Try The New Laurel's Kitchen or the Moosewood cookbooks for good, meatless, real-food recipes. You can also just leave the meat out of a lot of things and they are still plenty tasty: spaghetti with marinara minus the meatballs, burritos or tacos with refried or black beans, veggie stir-fries, stews and pot pies and so on.
