I have a big bag of red beets I picked up at the farm store last week. My family likes golden and white beets roasted in olive oil, but I haven't been able to find them in a couple of years. (Growing our own has proved harder than it looks.)
How do you use beets?

Roasted in my Pampered Chef stone with olive oil.....and bit of maple syrup might be good as well......I put that on our brussel sprouts, when I fix them, and oh my.....so good!!!
I let the beets cook until they are caramelized and blistered. OH MY, I love beets!!!

Angel, you may not want to know . I make a smoothie for myself with raw beet, apple, parsley, flax seed, and water. YUM . I do this for high fiber and natural estrogen. Yet, beet really is sweet and it makes smoothies a pretty pink! Having said this, most folks prefer (and there may be good reason from a digestive standpoint) to cook a beet to some extent.

I'm trying the beet smoothie for sure!
Sometimes I throw one or two beets into potato pancake batter so that they come out pink! I began to do this for my oldest daughter when she was little, as a kind of treat just for her. We still enjoy them somewhat regularly at our house. I made these just last month when I had to provide lunch for our Little Flowers group (we're on wreath one, the pink peony lesson on love of God. The girls just loved them!

I dice them up along with carrots, potatoes, butternut squash, sweet potatoes, and a handful of garlic cloves. Drizzle with olive oil, sprinkle with salt and pepper, and roast at 400 for one hour, stirring every 15 minutes. I add the garlic after the first 15 minutes, or else it overcooks.

Me, too! MMMMMMMMMMMMMMMM!!!!!!
We also add turnips and rutabagas, and any hard squash we have on hand.
We do not use potatoes.....
Angel..............we have been able to grow beets easily. Keep trying!

spiced and pickled for my mom and the kids.
dh likes them boiled and served with butter, s&p.
my MIL makes that kvass stuff.
I agree with my dad that this is the only way to serve them:
Bring a pot of water to a boil, add the beets and a clean rock. Cook until beets are tender. Drain. (you could save the juice to use as a dye). Throw away the beets. Eat the rock.

pickled are good but Ukranian borsht is the most bestest absolute soup ever and I am not a soup person
usually made with pork stock . other veggies to add are carrot , onion , celery . dill is just fabulous in it . it is really good the next day as most soups are .
Now the best secret to borsht is you must absolutely top it with sour cream . You will be addicted in no time to this yummy nummy soup. boil beet skins with pork for making the stock to really get that bright colour going and beety flavour too . then cube beets with other veggies to stock .
we are well past beet season here now and I am now craving borsht !
