I am in such a boring routine..........same ol' food every week....month.....
I feel no inspiration....
I have five pounds of ground beef here......
Tell me, what do you all do with ground beef????

Oh my goodness, Chari, I am in the same boring boat!
I also had ground beef sitting in my fridge, till last night I buckled down and made a(nother) meat loaf! As I type, I am sitting here eating my lunch ~ yep, meatloaf sandwich .
Things I have made with ground beef:
~ meatloaf muffins (bake in muffin tins; once I "frosted" them with mashed potatoes and decorated with corn kernels - sounds weird but the boys ate it!)
~ cheeseburger quesadillas (scrambled hamburger and melted cheese inside soft tortillas, also nice with sliced tomatoes or zucchini)
~ cheeseburger potatoes (scrambled hamburger served with shredded cheese on top of baked potatoes; good served with tomato soup)
~ meatball subs (with tomato sauce and cheese)
~ meatball pizza!
And, although I've never tried it, meatball soup sounds pretty good.

We love meatballs in gravy with mashed potatoes. Browned ground beef in stroganoff with egg noodles is always a favorite, too. Also, tacos, burritos, burgers, meatsauce, chili.

Hi Chari,
Our favorite ground beef meal is Super Nachoes. It's easy of course, lay tortilla (we like the blue) chips on large cookie sheet, top with cooked ground beef, shredded cheese, corn if you like, and put in a 350 oven until cheese is melted. Before serving, top with tomatoes, green leaf lettuce, green peppers, any other veggie, and serve. We sometimes will use sour cream or taco sauce. This has been an easy lunch on difficult days. You can also add refried beans if you have them.
I can't wait to see the other responses you get, I could use some inspiration too.

Here's my mom's recipe for Albondigas (Mexican Meatball Soup). She says it takes 1 1/2 hours to make and this is for 3-4 servings so when I make it, I definitely double it.
Bring to a boil 7 cups of water and 1 tsp salt.
Mix 1 lb ground beef
1/2 tsp salt
1/3 cup raw rice
1 egg
1 small or 1/2 large onion chopped
Form into big meatballs (about the size of your fist) and drop into boiling water.
Add 4 oz tomato sauce
2 celery tops with leaves coarsly chopped
2 carrots chopped
Cook for 45 min just boiling.
Add 1/2 Cabbage, chopped, shredded or cut into wedges.
Cook 15 minutes more.
From personal experience and taste, I'd say she underestimates the amount of salt that should go in the broth (and maybe the meat too, I can't remember). I don't have any notes on the card though, so I can't give you any idea of how much more I usually add.

There was one other quick ground beef meal that my mother fed us while growing up in the midwest; golash. It's so easy if you like tomato sauce.
Boil a box of elbow mac. drain, put back in pot, add tomato sauce (depending on how much you like, 2- 15 oz. cans or 3 if you like more sauce)
Add cooked burger(how much burger depends on how much you have, how much you like, usually a box of noodles goes well with 1.5 lbs of cooked burger) to noodles and sauce until well melded. You can add some mozzerella cheese to it also. Serve.
You can also put the golash into the oven with mozzerella cheese on top in a 350 oven. Leave in until melted.
I serve golash with french bread (sometimes homemade, sometimes not) and a salad.
"It sticks to your ribs" as my brother used to say.

Of course the soup is much better with fresh flour tortillas.
Tortillas
7C flour
3 tsp salt
2 tsp baking powder
Mix together. Work in 1/3 C crisco (veg shortening) like you would a pie crust. Mix in 2 C water or more until the dough is not too sticky or dry. I use my hands for the crisco and the water part.
You can let the dough rise a little or just roll it right away. Use golf ball sized balls of dough and roll them out to be as thin as you can (mine usually resemble Australia) and then cook them on a hot cast iron griddle, maybe a 1/2 minute on each side. If you want to be just like my mom, use your fingers to turn them over.
Refigerate dough you don't feel like rolling right away. I have no idea how long it lasts since we eat it all right away.
Or you could use those things they sell in grocery stores.

Rachel, that sounds so yummy. Wish it didn't call for egg! Ground beef is limited here...although I do have rotations. Since I can't do cheese (dairy), egg or flour (wheat), I feel like I do have a pretty good number considering. My favorite cookbook for ground beef choices is Whole Foods for the Family. We do hamburgers (without buns for some of us), chili, Super Sloppy Joes (recipe courtesy Rachel Ray) but serve with corn tortillas, Tacos, Hamburger Stew (very hearty, from LLL), Spaghetti. There is a recipe for Egg, Wheat and Milk Free Meat Loaf that I will eventually try. My problem is a lot of these meals require tomato sauce...something that doesn't always agree with me!

Slow Cooker Taco Soup
I purchase Taco Seasoning in bulk (McCormick will do) and ~4T = 1 package taco seasoning.
1.5 recipe fills my crock.
Can use ground turkey.
Crowd pleaser.

Chari,
I was recently in your same situation, but only had 2#'s of meat. I even asked another homeschool mom what to do with it! She suggested the noodles and gravy meatballs as Molly suggested. I picked up egg noodles last week so I could try that next time. We ended up preparing tacos and spaghetti and meatballs.
My husband does not care for meatloaf, but I made
Individual Meatloaves for friends who were coming over to stay with the kids while we scooted out for "date night." They did not leave leftovers..so I think it was a hit.
I made Enchilada Casserole for a potluck and it was quite nice. The recipe was from the newspaper, but I googled it and found several online.
We mostly make cheeseburgers when we have ground beef. It is not very often so I make them really yummy with fun toppings. I add Blue Cheese Crumbles or dressing, lettuce, tomato and sauteed mushrooms. My husband prefers bacon and cheese, as do the younger boys.
My mother in law makes yummy porcupine meatballs. (they have rice inside). I do not have her recipe, but again I googled them and there were several recipes online.

Well, you could make those stuffed peppers Mary mentioned early this morning on the John Bosco thread.
We have a ton of ground beef (well, not literally--but a whole lot since we got a side of cow and the butcher apparently favors ground beef ) and Mary Beth has taken to working her way through Fifty-two Meat Loaves

Oh, I wish we could trade. I'm OUT of GB completely!! We buy our meat in bulk and I'm down to the weird cuts
Also, I have pork hocks coming out my ears We buy a whole hog from a lovely hs family at our parish (Certified Organic )
We're due for our beef soon.
Once a week we have taco night with the trimmings! (except for now that we don't have GB) We absolutely love LaTiara brand shells. Light and crispy. They're at our regular grocery, so check it out. Also, I have one kids who despises them (go figure-there's always one!)so we offer flour tortillas also for soft tacos on taco night.

We use ground beef almost like a condiment in our household, since my husband had quadruple bypass a few years ago. I buy the leanest ground beef possible and tend to brown it all up at once and freeze in half pound portions (small margarine tubs work great).
Chili is a wintertime favorite here...we use lots of petite diced tomatoes; several kinds of beans (such as garbanzo or ckick pea, white kidney or cannellini, dark red kidney, black beans, red beans, seasoned beans if we have them, etc.); finely diced mild banana peppers and onion; a generous amount of brown sugar and red wine vinegar (perhaps 1/2 cup each), chili powder to taste and lots of simmering. Serve with lowfat sour cream and whole wheat crackers or tortilla chips. Chili freezes well, so we usually make an extra large batch.
We came up with another recipe our family calls "Sloppy Jose"; black beans, 1/2 lb. ground beef, petite diced tomatoes, salsa, topped with a single recipe of cornbread (corn mixed into the cornbread makes a nice variation, especially if you use corn with peppers). Bake according to cornbread recipe temp. and baking time, or might take slightly longer. (Best cooked in a large cast iron skillet)
I had planned to have pierogies in spaghetti sauce for dinner, but now I'm thinking chili!

I actually was faced with GB last night and couldn't face another meatloaf. I went with Shepherds Pie. Not exciting but it had been a while. Very quick and easy.
