Kids and I had this for lunch today -- I cobbled it together from whatever I had in the fridge... they loved it! So I'm sharing...

1 pound penne rigate (Garofalo from Costco)
1 can diced tomatoes, drained (Costco organic Del Monte)
1/2 package bacon, chopped, pan-fried, drained (from local farmer)
couple tablespoons chopped kalamata (my kids don't like this too much, esp. when left in large pieces)
tablespoon capers
diced gouda cheese, small handful (Costco)
several handfuls corn (Costco)
several handfuls green beans (Costco)
Vegenaise and salt and pepper to taste

Boil pasta accdg to mfr directions.

While boiling, prep veggies and fry bacon.

Add green beans to pasta last 6 minutes of cooking.

2 minutes before pasta is done, fish green beans out with tongs and chop into bite size pieces

Toss everything together

I love that it's creamy without using cream and/or eggs (egg allergies)
