I need your best recipe!
Since I am currently living in the land of endless summer, I am craving a taste of fall, big time! And nothing says fall to me like cranberries and nuts!
I want to make a cranberry walnut bread and I am looking for tried and true recipes.
Lay it on me ladies, I KNOW you've got what I want!

Our favorite is the one from Cranberry Thanksgiving. Here's our version:

Cranberry Bread Thanksgiving Cranberry Bread
(makes one loaf)
Preheat oven to 350
2 c flour
1 c sugar
1-1/2 tsp baking powder
1 tsp salt
½ tsp baking soda
¼ c butter or margarine
1 egg, beaten
1 tsp grated orange peel
¾ c orange juice
3 c fresh or frozen cranberries, chopped or “ground”
1 c chopped nuts (either walnuts or almonds) - optional
Sift flour, sugar, baking powder, salt, and baking soda into a large bowl. Cut in butter until mixture is crumbly. Add egg, orange peel, orange juice all at once. Stir just until mixture is evenly moist. Add cranberries and nuts.
Spoon into a greased 9x5 loaf pan (or 6 small loaves). Bake for 1hr and 10 minutes (less for small loaves) or until toothpick inserted in center comes out clean. Remove from pan; cool on a wire rack.

Here's another (we make this either with chopped apples or cranberry; the cranberry and orange is wonderful combo):

Cranberry Orange Bread
Preheat oven to 350.
While pre-heating, measure 1/2 cup rolled oats (not quick) into a pie pan, spreading to an even layer, and allow to “toast” while making the rest.
Put in blender:
1/2 cup salad oil
1/2 cup orange juice
2/3 cup sugar
2 eggs
Blend well
Add 2 cups fresh or frozen cranberries
Add 2 oranges, cut, seeded, but include peel
Blend well till fruit chopped up
1 cup golden raisins
1 cup nuts,
blend all for 15 seconds
Sift into bowl:
2 cups all-purpose flour
1 cup whole wheat flour
1/2 cup toasted oats (see above note)
1 tsp soda
1 tsp salt
2 tsp cloves
Add the toasted oatmeal to dry mix. Stir the blended fruit mixture into dry ingredients with a wooden spoon just until mixed.
Spray two regular sized loaf pans with oil and put mixture in them. Spread to get a nice even top.
Bake at 350 for 30-45 minutes, or until done. To get a nice crisp crust, I pop them out of their pans at 40 minutes and then leave them on the rack in the oven for another 10 minutes. Cool completely.
These freeze very well, not getting dried out or anything. To thaw: leave in fridge overnight and cut next morning. Toasted or slightly warmed, with cream cheese – wow!

Here's one that uses dried cranberries and is the best soda bread I've ever tasted!

Cranberry Soda Bread
If you're not already a fan of soda bread, you will be after you've tried this variation. To achieve the right texture, you should cool it before serving.
1/2 cup old-fashioned oats
1 3/4 cups buttermilk
1/3 cup honey
2 tablespoons vegetable oil
3 cups all-purpose flour
1/2 cup whole-wheat flour
1 1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 cup dried sweetened cranberries
1 cup chopped walnuts
Heat the oven to 400 degrees. Lightly oil a large baking sheet and dust it with cornmeal. Measure the oats into a bowl, then stir in the buttermilk, honey, and oil.
In a large bowl, combine the remaining ingredients and make a well in the middle. Pour the liquid into it and stir briskly with a wooden spoon until the dough pulls together in a shaggy mass.
Let the dough rest for 3 minutes. Turn it onto a floured surface and gently knead the dough for about 30 seconds.
Next, divide it in half and form each half into a football shape with rounded ends. Place the loaves on the baking sheet with plenty of room between them and cut a shallow slit down the center of each.
Bake the bread for 20 minutes, then reduce the heat to 375 degrees and bake another 25 minutes, or until the loaves are golden and crusty and the bottoms sound hollow when tapped. Cool before serving. Makes 2 loaves.

I was thinking quick, but I can do yeast also if you have a recipe you recommend.

Theresa, I found this recipe the other day, you know how I love key limes! I can't wait to try this bread out for a little Florida Fall Food Fun.
Cranberry Key Lime Bread
Ingredients
2/3 cup butter, softened
2 cups sugar
4 eggs
2 tablespoons grated lime peel
2 tablespoons key lime juice
1 teaspoon vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
1/2 cup chopped walnuts
1/2 cup dried cranberries
GLAZE:
2/3 cup confectioners' sugar
1 to 2 tablespoons key lime juice
Directions
In a large bowl, cream butter and sugar. Add eggs; mix well. Add lime peel, juice and vanilla; mix until combined. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Fold in walnuts and cranberries.
Transfer to two greased 9-in. x 5-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
Combine glaze ingredients; drizzle over warm bread. Cool completely. Yield: 2 loaves.

The best, best best in mho is the Cranberry Thanksgiving bread. My kids BEG me to make multiple loaves every year. But it is a killer---leaves me sooooo full.
