How do you keep the paper from getting all wavy and rippled when doing watercolor painting? I don't quite know how to google this.

Also, any particularly good sites for step by step watercolor lessons?

use water color paper.. it's heavier and won't ripple.

I do use watercolor paper, and it still ripples. Am I doing something wrong?

You stretch it... or use a heavier type. 300lb or heavier and you don't need to stretch it.

We have been experimenting with watercolor paper ATCs and have found that taping them down on the back side helps to prevent some of the curling. Once it is dry, placing it under a heavy stack of books seems to straighten them back out.

ATCs are a lot of fun aren't they Charlotte? They have less of a tendency to curl since they are so small- they are also pretty easy to make, as are watercolour journals
You can make the latter from one sheet of paper, use it to paint on then press once dry to keep it flat
