I was set to make enchiladas this evening, but after a long run and errands this morning, I gave into the urge to nap this afternoon and woke up a bit late for that... So we'll save the chicken for tomorrow and have Trader Joe's beef taquitos with a salad instead.

This is a little late...we finished dinner a little while ago. We had some wonderful soup, based on a recipe for a side dish that our oldest son told me about yesterday. He used all fresh ingred.; garlic, cilantro, lemon and ginger root, sauteed in butter, mixed with cooked rice, for a side dish. As he listed the ingredients, it sounded similar to a chicken rice soup we make, only we've always used powdered ginger, minced garlic from a jar, bottled lemon juice, along with canned mushrooms. I decided to try making the soup with fresh ingredients to see whether there really is that much difference! I started with chicken and broth...meanwhile, I sauteed freshly minced garlic, diced onion, sliced fresh mushrooms, finely shredded fresh ginger, finely chopped fresh cilantro and chopped celery tops, then added it all to the chicken broth. Finally, when everything came to a nice soft rolling boil, I added brown rice, with some salt and garlic pepper blend. The difference was incredible. The soup tasted dramatically different than it does when I use bottled, canned, dried, etc. With every bite, I kept thinking, this is definitely a soup I'll be making the next time anyone in the family has a cold or flu. We have a new winter comfort food!
