Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

i really don't know yet. i'm craving roasted green beans.... there's still time to do a yeasted bread, so i might do another struan. but for hubby i'll have to come up with something with brown rice... hmm... maybe brown rice pasta and leftover pasta sauce. and i have leftover coleslaw from the fish tacos the other day, and some leftover rotisserie chicken from sunday... which i'll probably turn into pulled chicken bbq...

what about you?

It's a difficult day.. I meant to do stroganoff last night but got a late start and dh wasn't home yet.. so I made pancakes and bacon instead. I had leftover meatloaf I could offer dh if he didn't care for pancakes. But he liked the pancakes and bacon so all was well.

so maybe tonight I'll do the stroganoff. No late dinner.. got scouts tonight.

I cooked a roast last night so I could cut it up today and make a large pot of beef soup. I love having soup on the stove when its chilly. (it's in the 40's here)

Italian baked chicken breasts and fettuccine alfredo. Dh and oldest son have philosophers club tonight, but the inlaws will be here - so I'll try to do it up good!

Smothered Chicken with Rice. I have to cut down the chicken population in the freezer now that it is duck and deer season.

Ham with Victory Vessels from Catholic Cuisine. Steamed broccoli. I'm getting hungry now; I think I'll go make lunch!

Mom's night out with friends for me! I asked my husband if he wanted me to make chicken noodle soup before I left but he told me he wanted me to have a night off so he'll be making pancakes and scrambled eggs.

A beef roast is in the crockpot with carrots and red potatoes. Leftovers (if there are any) will be made into beef stew tomorrow. I did set aside part of the roast for the stew, in case there are no leftovers.    But I'm now out of carrots, and what's beef stew without carrots? Have to figure a way out of that one...

Leftovers, thank goodness. That's about right for my energy level today!

Beans and cornbread.
We went to a 170 year old grist-mill on a field trip a couple of weeks ago, and I bought a package of their bean soup mix and stone-ground cornmeal...yum! Also, it's on hand...my in-laws were visiting over the weekend and I missed my grocery shopping day,so I'm playing "empty the pantry" this week.

Spanakopita with Greek Salad. I was going to make it last night, but ran out of time and had to go with something quicker. Hopefully my spinach is still good...

The boys are having breakfast for dinner. Eggs, muffins, pears, and pumpkin pie ice cream in the stead of yogurt. Can't wait to see their faces when they see what's for dinner!

Have a great night,
Michelle
