Anyone have any favorite "Fall" recipes to share? I'm in the mood to bake and the only thing I can think of is apple crisp! (And apple pie too of course). I got my apples this morning and hopefully will get the apple crisp made tomorrow.
Just wondering what all you other ladies make for the change of this season!

apple crisp is a favorite here
zucchini bread since we're getting zucchini from the garden
I saw a recipe recently that was your basic oatmeal cookie with chopped apples added.
fresh baked bread.. yumm.. so often during the summer I just give up on baking breads.. having biscuits and rolls and loaves of regular bread and italian bread fresh from the oven.. oh yum.

How about stuffed Baked Apples? When I make them, I just core them and fill them with some chopped apple (salvaged from the cores, of course!) mixed with brown sugar, chopped nuts, oats, cinnamon and sometimes butterscotch chips. The children love them with vanilla ice cream. Gingerbread and pumpkin pie come to mind this time of year too. Hmmmm...good ideas.

We just had sweet potato casserole. The only veggie my ds will eat ! The aroma swept through the house and the family commented that it felt like a holiday!!!!
A great way to celebrate the first day of fall!

Yesterday I made Savory Autumn Leaf Pies and they were really, really good! I used potatoes instead of parsnips since the store didn't have a single parsnip available. Dh compared them to Empanadas which would be another great savory baking option.
Oh, and I just made circular hand pies since I didn't have an appropriate leaf cutter. Cute as the leaves would have been, I just brushed the tops with milk and pressed herbs on top instead.

Most of my favorite "fall" baking involves pumpkins !
Pumpkin Bundt Cake
Streusel Filling:
1/2 cup brown sugar
1 t. cinnamon
1/4 t. allspice
2 t. butter or margarine
Cake:
3 cups flour
1 T. cinnamon
2 t. baking soda
1 t. salt
1 1/4 - 1 1/2 cups sugar
1 cup butter or margarine, softened
4 eggs
1 cup pumpkin puree
1 (8-ounce) container sour cream
2 t. vanilla extract
Glaze:
1 1/2 cups powdered sugar
2 tablespoons milk (approx.)
Preheat oven to 350°F. Grease and flour 12-cup Bundt pan.
To make streusel, combine brown sugar, cinnamon and allspice in small bowl. Cut in butter with pastry blender until mixture is crumbly.
To make cake batter, combine flour, cinnamon, baking soda and salt in a bowl. Beat sugar and butter in large mixer bowl until light and fluffy. Add eggs one at a time, beat after each addition. Add pumpkin, sour cream and vanilla and mix well. Gradually mix in flour mixture.
Spoon half of batter into prepared pan. Sprinkle streusel mixture over batter, not allowing Streusel to touch sides of pan. Top with remaining batter. Make sure batter layer touches edges of pan. Bake for 55 to 60 minutes or until wooden pick inserted in cake comes out clean. Cool for 30 minutes in pan. Invert onto cooling rack to cool completely. Drizzle with Glaze.
Pumpkin Muffins
1 cup pumpkin mash
1/2 cup brown sugar
1/4 cup melted butter or oil
2 eggs
2 cups flour
2 tsp. baking powder
spices - optional (cinnamon, cloves, nutmeg)
(We also add about a half cup chocolate chips to ours - yummy)
Mix pumpkin, melted butter, sugar, & eggs. In separate bowl sift flour and baking powder. Add dry ingredients to pumpkin mixture. Spoon into greased muffin tins. Bake for 20 minutes at 375.

Thanks, MaryM! I tossed my version of the recipe up on my blog - Summer Goes. They were good enough Dh asked for them again so I didn't want to forget the recipe!
You can see the herbs in my pictures there. I thought the fennel looked like bare trees thus keeping with the autumn theme but Marianna sat down and exclaimed how cool the Sea Fan pies were. I guess it's all relative to where you're raised - not too many spooky bare trees here in the Fall!

yummmm I like the little savory pies.. Maybe I'll do some for dinner.. more along the lines of a cornish pasty I think.. with meat, potatoes and veggie.. hmmm maybe some like a potatoe empanada.. potatoes and green chile.. yummy. Not to mention that it'll be easier for Dh to manage dinner when he's getting home in time to leave for scouts with our oldest boy at least he can carry dinner with him.
Oh and I did make the oatmeal cookies with chopped apple last night.. YUMMY.. they cooked about the same as usual but are softer (break easier)

Cay - that looks great! Pecans are a really difficult to find here in Germany. We have plenty of walnuts and hazelnuts....I did bring some pecans with me in my suitcase back to Germany, but because the supply is so limited I am very very stingy. I was hoping to save them for Christmas baking.

Veronika, are you from Germany???? Your apple recipe sounds like a treat we would have here on St. Martins' Eve or St. Nikolaus Eve. (sans butterscotch )

No, Stephanie. but my Mom's father was! Although the rest of my family heritage is Carpatho-Russian, my German great grandmother was supposedly a fantastic cook, and many of her German recipes have been passed down to my sisters and me. (We can make one mean saurbraten ) By the way, I made the Savory autumn pies and they turned out great!
