I think I've mentioned before that sometimes I pick up one of those deli roasted chickens when they are on sale and use the meat to make a huge batch of homemade chicken salad...I just cut up the chicken into bite-sized pieces, add halved grapes, celery, pecans and sometimes red onion. Toss these with a bit of mayo and dijon mustard and put on hearty bread (or just eat as is). Delicious in the summer months!!

Oooooooo, I forgot about Gazpacho! How about guacamole, chips, and salsa too - yum

I haven't purchased a roasted chicken in too long! I like to add it to a green salad or here's a different chicken salad which I mix to the texture of a spread...forgot about THAT too!

Cottage cheese and pineapple.
Yogurt and granola.

I really start getting heavy on the dairy for convenience and the chill .

Layer dip.. I actually love this as a "picnic" meal since you can sit around and share from the one dish and bag of chips.. no plates or utensils needed.

I usually do beans, sour cream, shredded cheese, salsa, and lettuce mixed with green onions with black olives on top. But if I have it I love to add guacamole and sometimes meat (I don't use the meat usually when I make it as a picnic)

Don't forget the tuna!    I love to mix tuna with pasta, tomatoes, fresh parsley, sliced black olives, olive oil, and capers. Actually, I think I got that from Desperation Dinners????

hummus is always good - we use it as a dip, a sandwich spread, etc.

oh - Angie - Sprouts always had some of the best roasted chickens. so does Costco. (i am drooling over Jennifer's chicken salad.)

cold tortellini salad - especially good with chopped up tomatoes, cucumbers and black olives, in a italian vinagrette type dressing (we used to get a version of this at the 'corner deli's' when we would go up to NYC. YUM.)

(i love pasta salads, even just cooking up a box of pasta and tossing it with some of the bottled "newman's own" dressing.)

can of black beans, fresh corn, chopped sweet onion, and fresh cilantro, wrapped up in a tortilla (can throw in a tomato too. this is a favorite of mine. sometime i mix in spanish rice....)

throw a bunch of baking potatoes on the grill. you can even turn some into potato salad if you do extra. chili on baked potatoes is yummy, too.

quesadillas (my kids eat so many of these it isn't even funny.)

oh - i forgot - Tomato Bread Salad. Similar to what you can get at Wildflower (however, i have to leave out the mushrooms (dh is allergic) and the parm cheese (i am allergic - but everyone else will add that on their own plate.)

cheddar cheese with apples and a good crusty french bread. this is more of a snack, but yummy, and filling. i love the contrast of the cheddar and apple. man, do i miss cheese!!!!!

we just found that at Costco, they have double packs of premade falafel. on a whim the other night, i threw some on the grill when dh was bbq-ing. oh, my gosh, they were awesome. lightly crunchy outside, moist and perfect inside. i mean, *really* good. they were awesome plain, or you can pop them in a pita or on flat bread with hummus or yogurt/cucumber/mint mixture....
