I am taking a week's worth of meals to a family that needs them. I am struggling to find ideas for meals that would be good to eat in the summer and be easy to store to use later in the week. If anyone has any favorite recipe that they think would work I would love to see it. Thanks.

I was going to suggest a 7 layer dip.....but then I read that you wanted something easy to store for later in the week.....I have to run now but I'll try to think of some things.....

what about:
-a deli platter and some rolls

-a big salad (with tomatoes such such separate) with grilled chicken could be easily pulled out later in the week.

-chicken salad with rolls and chips

-cold pasta salad (could keep cut meats and cheeses separate)

-pulled pork sandwiches

-taco salad

Maria, the seven layer dip looks really good. Maybe they could eat that on the first day or two.

If they have them.. things that go in a crock pot can be set on a porch or in a garage or something to cook so that the heat isn't in the house.. like the pulled pork for sandwiches.. could be heated up in a crockpot outside of the house.

I also like burritos.. for those you take the components and they just heat up the beans, meat and tortillas and everyone makes their own.

You could do the same with the layer dip.. put on the layers that will work to be left together in the fridge and then have the other toppings in seperate bags to be added right before eating.
