i have a friend who is having a baby soon and she is a vegetarian. i would like to put together some meals for her that she can freeze until she needs them. any suggestions? i thought of vegetarian lasagne, maybe a cheesy potato dish, but besides that im stumped

I make lentil enchiladas and lentil shepherd's pie.

Basically, cook up 1.5 cups of lentils and 1.5 c. of brown rice with 6 c. of water. Bring to a boil, then cook on low for 45 minutes or so until the water is all absorbed.

Use it just as you would ground beef in casserole type recipes. I make up huge batches of this and freeze it (the lentils and rice) all the time.

I know a lot of people that make bean burritos and freeze them, for quick meals/snacks on the go. Make the bean burrito, then put them on a cookie sheet and stick in the freezer. After they are frozen, put in a ziplock and you have your own individually frozen burritos!

I like a cheesy lima bean cassarole . It is basically baby lima beans cooked up with sauted onion and steamed brocoli , salt & pep. Then make a cheese sauce and mix the lima bean mixture up in it . top with breadcrumbs and melted butter it is so yummy . I got the recipe from Bean Banquets
a book of my mothers.
what about spanakopita ? cornbread with vegetarian chili or lentil stew . I make a veggie pie instead of a chicken pot pie .My sil gave me the recipe . again it is just sauted frozen vegies with onion and spices mixed with a cheese sauce . place in a pie shell , top with pie shell and bake like any old chicken pie .This freezes nice too .

Tortilla casserole!

Just layer tortillas like you would lasagne noodles using cheese (or yogurt or even soy yogurt for a vegan) salsa, and beans for the layer. Bake as you would for lasagna and you are done.

It's a hit with my kids every time, plus if you use soy yogurt and no cheese it's vegan, use corn tortillas and it's gluten free.
