My DH and I planted a garden for the first time this year. I really do not want any of the delicious vegetables or the hard work put into the garden to go to waste.

Therefore, I was wondering if someone had a fabulous pickle recipe they would like to share or any other ideas for cucumbers?

Also any ideas for tomatoes, squash, zucchini??? Canning? Freezing? Salsa?

I really like lacto fermented pickles. Its just salt water and seasoning--no cooking.

There is a recipe in Nourishing Traditions and another in Making Sauerkraut which we've liked, and we have added garlic and horseradish (horse radish or grape leaves help the stay crunchy).

I will try to find the scrap of paper from last summer where we wrote our final recipe. I'm not sure we did it the same way twice, so, I'm hesitant to offer you a recipe as "the best."

I would do a search, though. Fermented foods are SO good for you, and it is only in recent years that condiments like ketchup, pickles, sauer kraut, etc... have vinegar added (instead of the natural process of fermentation creating that taste) and pasteurization used which make the food less beneficial than it was in years past.

And better yet, they taste good, too. Homemade sauerkraut and pickles are so delicious and easy-peasy.

My gram's bread and butter pickles
8 large cucumbers, sliced
4 onions, sliced
1/4 cup salt - use pickling salt if you can find it.
1 pint white vinegar
3/4 cup sugar
1 teaspoon celery seed
1 teaspoon mustard seed

Use fresh cucumbers; wash and slice not super thin- dond't use your food processor. Slice onions. Mix vegetables with salt and let stand 1 hour.
Drain and rinse with 2 cups cold water. Combine vinegar, sugar, celery and mustard seeds and heat to boiling. Cook 3 minutes.

Pack vegetables into jars, wide mouth ones are simplest- add hot vinegar mixture, leaving 1/4" headspace. Seal at once and process in boiling water bath for 10 minutes.

Cool and store.
I actually make triple batches of this. I also sometimes add strips of red pepper when I add the onions. We like this with sandwiches and cannot have ham without them. I'm sure it's a law or something.

I was going to try the Duggar's recipe with our Boston Pickling cucumbers that are producing abundantly.

GARLIC DILL PICKLES
3/4 c. salt (this is to salty for some; may be reduced to 1/2 c.)
4-5 cups white vinegar
8 c. water
cucumbers (enough to fill 6- 1quart jars.)
18 cloves garlic, peeled
6 T. dill seed (not weed.)
Wash cucumbers, cut into spears, and pack in jars. Add 3 cloves garlic & 1 T. dill seed per jar. Place jars on baking sheet (or pan.) in oven at 250. (this keeps jars hot so they’ll seal when you add vinegar.) Boil vinegar, salt, and water, pour boiling mixture into hot jars, and immediately put hot bans & lids onto jars. (keep lids & bands hot by boiling them first.) Let cool on counter. (they should seal while cooling.) Let sit 10-12 days before using (this is the hard part! If you can’t stand it, only wait a week!)(Our favorite dill pickles!) makes 6 qts.

There was a thread, recently, on how to can tomatoes (sauce). I am sure that I have commented in the past on what to do with zucchini - search the archives and I'm sure that you will find lots of recipes for zucchini pickles, bread, cake, muffins, and more.

Winter squash is something I don't remember seeing anything about, though...we have butternut and buttercup growing and I'm going to need to look up some "best storage" practices so that it lasts.
