We don't actually make our own spaghetti sauce yet, but we did buy a couple of oregano plants for variety in our vegetable garden, and it appears we will have some to harvest very soon (like maybe before my husband comes back indoors in a few minutes!)

Any ideas how to get some good use out of this without going out and buying cans of tomatoes and beginning a whole new project?

Hey Theresa,

This is our first year for oregano, sage, and thyme. I put some oregano on our pizza, with some basil, and, wow! Just make sure you don't put too much - maybe one tsp. total of those leaves, and you can always try more next time.

Throw some in any Italian themed casserole/pasta dish, or when you want, cut off some stems and dry in a warm place, inside a brown paper bag, and when they are dry, pull off the leaves and save for winter.
