Taco's here tonight. My kiddos will be coming in from swim practice and they'll be hungry, I think seeing tacos with all the fixings on the table will make them very happy indeed! Dh and I will top off our tacos with Angie's super, yummy salsa!
Does anyone make their own taco seasoning?? Care to share the recipe?

We have a championship softball tourney tonight so I'm making bbq drumsticks, baked potatoes and green beans.
Hopefully, we'll have some yummy dessert to celebrate the victory!
Otherwise, we'll play Thursday to try and place first.....but I wanna be done tonight!

Hmmm...taco seasoning? I first soften onions and garlic in olive oil, brown the meat, then add salt, cumin, majoram, Tabasco sauce and/or red pepper and tomato paste and water.
Mild probably to most. I got the inspiration to make my own from one of the LLL's cookbook. My mom always used the store bought seasoning, but it has wheat in it, so I had to come up with alternatives.
And for us, we're doing roast beef and rice noodles. Trying to provide leftovers for tomorow night when dh and I celebrate our anniversary together. Even hiring a babysitter for the occasion.
And just because I feel chatty (too much caffeine?)...we've been eating pretty regularly on our screened porch for dinner. It's amazing how just eating out of doors, even though it could be the same utensils, same plates, chairs and table (as opposed to a picnic on the ground) it is so relaxing for us all. We all enjoy it so much.

Why, Syncletica's Scalloped Ham Potatoes, of course
1 C. water
1/2 tsp. cream of tartar
5 med. potatoes, thinly sliced
1 C. chopped onion
Salt, sprinkle
Pepper, sprinkle
Sauce
1/4 C. all purpose flour
1 tsp. salt
1/2 tsp. pepper
2 C. milk
1 C. grated med. or sharp cheddar cheese (opt)
2 C. Cubed boneless smoked ham
Combine water and cream of tartar in large bowl. Stir. Add potato. Stir well. This will help keep potato from darkening. Drain. Layer potato and onion in 5 quart (5 L) slow cooker. Sprinkle with salt and pepper.
Sauce: Stir flour, salt and pepper together in saucepan. Whisk in milk gradually until no lumps remain. Heat and stir until boiling. Pour 1/2 of sauce over vegetables. Sprinkle with cheese and ham. cover with remaining 1/2 of sauce. Cover. Cook on Low for 9 to 10 hours or on High for 4 1/2 to 5 hours. Serves 6.

Can we sometime have a regional variation on this topic, along the lines of "It's too stinkin' hot to turn on the oven...so what's for dinner?"
Summer has hit here in Texas with a vengeance; we had a cooler than usual spring, and this whole week where I live the temps are "varying" from 97 to 99, with heat indices in the triple digits. Now where did I put those salad recipes.....

Nothing exciting here for dinner - probably pasta with tomato sauce and a salad - we need to run out to see a potential house to buy - an updated 1901 farmhouse!
As for taco seasoning, I've always just used this one: 1 tsp each of cumin, chili powder, onion powder, oregano, garlic powder, and a generous "shake" (probably 1/2 tsp or less) of paprika, salt, and pepper, and a pinch of cayenne pepper. Actually, I never really use this exact recipe - it's the one I base on but I just eyeball everything and almost never use onion powder or red pepper because we don't have them.

Oh, I hear you. I hate those days when you are more wilted than the lettuce! Too Tempting for Take Out!
I think we did have a few thread on hot summer cooking (or lack thereof). How about just putting some slices of cheese and meat, grapes, veggie tray, and some kind of starch (chips? Bread?) and call it dinner.

Very simple. Linguine with store-bought pesto; tomato and fresh mozarella. Dd 17 prepared a slightly more complex meal last night. As long as others are doing my cooking, I have to alternate those complex ones (complex for someone who hasn't been cooking for 34 years) with real simple things. Got to keep up the morale...

Tonight we're having bbq ribs. For a side dish/vegi's I don't know yet. I probably should get thinking though!
I love these "what's for dinner threads". Gives me new ideas!
And I've never tried making my own taco seasoning or salsa. I'm going to have to try it sometime! Although I'm the only one who eats tacos...DH can't stand the smell/taste of Mexican! And I love it!

oh taco seasoning.. I was just looking for a good one myself.. I can make it in the pan from scratch just throwing things in.. what I want is to make up a BIG BATCH of dry seasonings.. so that I have a good base to work from.. I can throw it at the pan and get things going and then if/when I have time I can add this or that..
I want to put in an order to herbalcom.com soon so I need to figure this out.
It is a variation of ground chile peppers, cumin, oregano, onion and/or garlic pwd.. sometimes chili powder but you know what.. that's ground chile peppers and cumin and oregano and onion and/or garlic so I'm thinking it sounds silly to use if I'm making a big batch..
Cumin is the spice most likely to be left out and leave you wondering what's missing.
There are premade taco/mexician seasonings you can buy (with teh spices) that aren't seasoning packets.. but I can get the herbs so much cheaper that I want to mix up my own instead.
Oh and a bit of tomato in with the meat and spices is nice too.
No clue on dinner though.. I need to figure out what we have in the way of leftovers and go with that.. hmmmm...

The heat index here in North Texas has been around 100 for the past week and I sooooo have not been wanting to cook. I guess I'll scrounge around for leftovers in the fridge or may be just make a big pile of spaghetti pasta noodles with parmesan cheese and cold baby carrots! Something e-a-s-y.

Hot hot hot here as well! (Forgive me when I said cold cold cold all winter...ahhh, the prairie climate).
We are having linguine and tomato sauce with asparagus on the side. Melons for dessert. (sort of along your lines Kathryn- we are all too hot to want to eat too much but we have soccer tonight!).

Cheese quesadillas dipped in whatever you can find in the fridge.
ETA: For taco meat my (TexMex) dh always browns the meat; then throws in some salsa.
