Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Tonight we are going to have some kind of gyro. Everyone has been asking for gyros but the store I went to was out of ground lamb. I think I may have a recipe around that calls for ground beef. We have some pocketless pitas, I'll make some tzatziki sauce and stuff the pitas full of lettuce, tomatoes and feta.
Cherries and strawberries for dessert, if we don't eat them up before dinner. I love summer fruit!!

I'm actually cooking tonight!!! No ballgames!!! Thank you, Mary Chris for providing me a spot to shout it from the rooftops!!!

Tonight I'm making slow cooked steak, brown rice, and gravy, fresh cabbage in a light vinnaigrette dressing, peas, and sliced tomatoes (I found all the produce fresh at our Farmer's Market - and I can't wait to dig in!)

Would you share how you make that, Mary Chris? I went to this tiny Greek restaurant in Nashville with my sister a few weeks ago and they had the most amazing gyros and tzatziki sauce! I'm really itching to try my hand at gyros now for a fun dinner. Seems like it would be nice and light for a summer meal.

Okay you ladies at 6am already knowing what you are having for dinner make me envious! I'm not good in this department.

All I know...must be some sort of ground beef because I just discovered for some reason I have an abundance that I didn't think I had and I need to move it along    Maybe I'll find some inspiration here!

First swim meet of the summer tonight! Dinner is tuna salad, chips and fruit if I can get the girls to be still long enough to eat!

Here's an easy recipe for Gyro's. I found this recipe at Chaos in the Kitchen blog.

Gyros
1lb ground lamb or chuck
2 garlic cloves, minced
2 tsp oregano
1 tsp onion powder
1 tsp salt
3/4 tsp black pepper

Combine meat and spices, form patties, broil 8-10 minutes, slice patties thinly.

Tzatziki Sauce
2Cups thick Greek yogurt
1 cucumber, peeled, seeded and grated
1 clove garlic, minced
2 Tbsp olive oil
1 Tbsp red wine vinegar or lemon juice
salt and pepper

Combine and chill

We like the Alton Brown: Gyro Meat with Tzatziki Sauce recipe. He makes it in a loaf form, but a bit more complicated. You know....Alton Brown like.

ETA....I don't know why the link isn't working. I'll try and investigate later today.   It comes up easily on a google search though.

Mary Chris, you can find the recipe at:

Alton Brown.

We are having Spanish chicken, pasta, and sauteed peppers and onions. I might serve some guacamole and chips as well.

Maria, this is a receipe handed down to me from my mother-in-law, very easy. Sorry, not a crock pot receipe.

We use breast, but you can us any pieces you want. In a large skillet, brown chicken in oil on both sides, add tomato sauce, onion, basil, oregano, sliced mushrooms, and a little bit of water. Cover and simmer for 35 minutes, add some peas after 25 minutes. Serve with rice or noodles.

Don't you just love the exact measurments .

God Bless
Robynn
