Every summer I heroicly attempt to resist the high fructose corn syrup offerings in the popsicle aisle from the grocery store, despite many voluble requests from the under 12 crowd in my house. I also can't afford the all fruit juice, no corn syrup yummy ones I like. However, all of my attempts to make tasty popsicles at home have been met with less than enthusiasm. They complain they don't taste good, or the texture is wrong. For example, simply freezing juice or lemonade does not produce acceptable results for my crew.

I have an awesome watermelon Popsicle recipe I pull out each year. Its in a Cook's Country, I believe, though, so I'll have to try and remember to find it.
Pretty sure the secret is LOTS of sugar

kool-aid tends to make a decent popcicle.. at least you can use real sugar rather than the corn syrup.. and doesn't breakt he bank like the fruit juice ones. Not sure how to make them healthy..
but I'm afraid that I not only don't resist but buy otterpops on sale whenever I can I can't usually keep up otherwise.

Tip: don't fill the molds all the way to the tippy-top, as the juice expands when it freezes and then you have mess.
Wow, thinking about making popsicles.... Now you've got me thinking, too.

We freeze leftover Smoothies. Which has, usually, frozen fruit, a bit of yogurt(vanilla and sometimes I can get plain in), some protein powder(chocolate flavored) and we used to( but we are weaned off it now)put in some vanilla and honey.
My kids like grape juice popsicles-not diluted which is a treat in our house. And sometimes they enjoy OJ pops.
I was going to try to puree some fruit this summer and freeze it in popsicle form.
One of my favorite things, because it is chocolate, is freezing fat free chocolate yogurt. Just heavenly for that 3pm hump.
Can't wait to get some more ideas!!!

Kathleen, I have a recipe for a yummy and very economical Orange Julius..I wonder how that would turn out if we poured them into popsicle containers to freeze?
Here it is:
*6 oz of concentrated frozen orange juice
* 1 cup of milk
* 1 cup of water
* 2 Tbsp of granulated sugar (white)
* 1 tsp of vanilla
* 12 ice-cubes
Directions: Pour into blender, and blend until can't hear the ice-cubes clinking around anymore!
I'll try this out tomorrow and let you know it's success rate

oh you can freeze whole bananas (or rather in halves to go further) you can roll them in things first or wait until they're frozen and cover with chocolate and refreeze.

My 13dd has been freezing crystal light in ice cube trays. It works well and is yummy--and guilt-free.

What don't they like about fruit juice ones? There are so many different kinds of juice that my kids love them. I buy only the ones that are 100% fruit juice and like someone else said, don't fill them up completely.

When we freeze all juice, it tends to end up as a block of ice that they very quickly suck the juice out of, and then they are left with a block of unflavored ice. Grocery-store popsicles don't do this? Any ideas how come? Do they add something to homogenize or bind?
I tried strawberry kool-aid and used part xylitol powder and part sugar and squeezed a fresh lemon in. They declared them delicious. Mom won't be making them again though, because my children are notoriously messy eaters and the red dye got EVERYWHERE!
Keep them coming, pretty please.

here are some unusual ones the adventurous might want to try:
cook red beans (adzuki) then soak in sugar syrup overnight
put 1-2 tablespoons in bottom popsicle molds; top with sweetened cream or milk. there will be separation and some parts may be icier than others. you can also try milk thickened with cooked rice (run in a blender) -- kinda like gelato di riso
avocado run in blender with cream or milk and sugar, vanilla if you like, a bit of lemon if you like (if you've never had avocado sweet, try this!)
jackfruit (available in asian stores, in the canned aisle) run in blender with cream or milk and sugar
can do the same thing with mango or use mango nectar
i haven't tried guava but i'm thinking of doing that next.

If you follow the Orange Julius Recipe up there, it fills 3 ice-cube trays! Just add the popsicle sticks about 20 minutes after you've put the trays in the freezer. Return the trays, and they'll be ready to eat after 10 minutes!

We love just freezing smoothie and slush mixtures.
Smoothies: banana, yogurt, OJ, frozen berries
Slushes: lots of frozen berries, lemonade, a little bit of agave nectar (instead of sugar)
Both of these make very tasty popsicles!! :)

We tried the Orange Julius recipe above with frozen lemonade concentrate--we didn't have orange juice concentrate. It was good!! It did have high fructose corn syrup in it though. I am not sure if OJ concentrate has HFCS or not. We froze the extra into popsicles and are very interested in how they taste.

Popsicles didn't work. The lemonade ones using the Orange Julius recipe. They separated milk and lemonade and didn't stick to the stick. But the slushie was good!!

We make jello brand ones ... add 1 cup of sugar for the small pack and make as you would normally .. just freeze instead of the normal chilling. The extra sugar helps it from getting icy and bland ...

We often have popcicles for breakfast because they are often so very yummy just like a smoothie but frozen
One tip if you use milk at all be sure and add some water to the mix .Milk does not seem to freeze as well on its own .
We like adding honey frozen berries a bit of yogurt milk and water . blend it all up and pour into popcicle maker.
My two fav flavours are peach almond using canned peaches in the mix with a bit of pure almond extract .
I also like coconut mango. I use the canned coconut milk but fresh would be even better . then use fresh cut or frozen mango pieces.
Every now and then I make pure juice ones but I am a sucker for the yummy creamy fruity ones
