Last Friday I ran out the door to a goodbye dinner, yelling to dh, "There's oven fried potatoes in the oven to have with the sloppy joes!" Well, guess what I just found! They must have sat in there all weekend.
They were just thick potato slices, tossed in oil and salt and baked for 20 minutes or so. Do you think they are still edible tonight? I hate to waste the whole tray full.
Still though.

once they're cooked I think they should be refrigerated.. but I'm not 100% sure.. just how I do it here.

Hmm... okay... don't be scandalized, but I'd be tempted if I went to all that work to make them. What's in a potato that can go rancid? Plus isn't salt a preservative?

And now I'm thinking about old french fries that my kids have found, eaten (to my chagrin), and don't have any problems. I'm sure they'll get sick and they don't. Then when I think we've been eating healthy, drinking fluids, sleeping well... and we all get strep, or the flu, or whatever.
But I tend to live by the "kids need to eat a peck of dirt" school of thought."
Except... I won't drink milk when the date is up. Go figure.
Okay... I'll stop rambling about our eating habits.
I've solved anybody wanting to come over for my house for dinner though.

Well, St. John Vianney would cook up 5 or 6 potatoes each week, leave them out, and that's what he would eat all week. He was pretty skinny, but he didn't die of food poisoning! Your county extension office could probably give you an "official" answer. Having said that, I'm clearly not a saint...I wouldn't eat them !

OK, I cooked them again because I was heating something else up anyway ... they shrivelled up pretty bad but I did taste a few and they seemed fine, smelled fine. I won't serve them to the kids, but I started thinking they are almost exactly like potato chips...which don't go "bad" so... we'll see!

OK one more post on what is definitely the dumbest thread ever (on my part, not because of all your helpful replies!)...I had a few, then googled and enough "experts" made it sound like it was a bad idea to eat them (not wanting to get sued no doubt, but still...and they were referring to baked potatoes anyway ) so I tossed the rest. Guess I'm wishy washy!
I'm betting they were fine.
