Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

I posted my plans for an easy summer menu for our post-baby days here on my blog. I thought there may be some other mommies who could use ideas for easy summer meals, so I'm sharing it here.

That's great Colleen. One really helpful thing my dh did before the last baby was to make and freeze lots of individual pizza crusts. It was so easy for the kids to pull out and throw some sauce and cheese on for a quick meal.

Thanks Colleen. Here is mine

I feel pleased to have stuff in the freezer. Have also frozen muffins and made granola.

problem - I am coming to the end of my 4 week rotation and am way too tired to think of doing it again. Have to stop myself taking things out of the freezer Thank goodness I did all that cooking when I felt more energetic.
