My husband eats salsa by the truckload :) and I am trying to make it myself. I used a Ball salsa packet I had in the freezer (I think I bought it on clearance last year) and a 10# can of diced tomatoes from Costco yesterday and the results were so-so. It was too liquid and I don't think cost effective. He requested purple onion in it as well and all it had were the dehydrated spices. ALl that to say -- does anyone have a good salsa recipe to share?

Angies' salsa recipe inspired me to try making my own. This is how I remember the recipe and make it.....
I've made it so often I no longer have the original piece of paper I wrote it down on....
can of diced tomatoes
bunch of cilantro
lime juice
garlic
Put it in the blender and whir until it is the texture you like.
It would be tasty with red onion added.

YUMMY!! We love salsa and eat it here by the truck load also. You might have to play with the heat a bit on this one, but here's how we like it:
4 med. tomatoes
1 sweet onion
bunch of cilantro
garlic
Knorr Caldo de Tomate (either regular or Chipotle flavor)--(secret ingredient )-couple of tablespoons or 1 cube
aaand if you really like it HOT-- a boiled jalapeno pepper
Quarter onion and tomatoes and throw them with rest of ingredients into blender
Done!

Here is our recipe. We like it so much we don't buy jar salsa anymore.
2 large cans of petite diced tomatoes
3 limes, squeezed
1 bunch of green onions, with some tops, chopped
1/4 bunch of cilantro, chopped
1 tablespoon of sea salt
1 jalapeno pepper, chopped
1 seranno pepper, chopped
2 tablespoons of minced garlic
Put it in the blender in stages and blend. Put in the refrigerator in glass jars.

I use a grinder.. it's a fine chunky texture instead of the smoother blend of the blender or the diced texture.
I also prefer new mexican green chiles (like hatch chile) over the bitterness of jalepeno.. a hot batch of the green chile is easily hotter than jalepeno if you're looking for spice.. but you can also mix the chile to how hot you like but still get enough chile flavor (like mixing a hot chile with oretega chiles)
And any combo of veggies works just fine..
chiles (whatever variety or mix canned or fresh), tomatoes (roma are nice and meaty and have less liquid to the flesh), onion, yellow onion, purple onion, green onions etc., fresh cilantro, I've even added black olives in before.
seasonings: cilantro, garlic, salt, lime, cumin, oregano
you'll want to keep notes and experiement and find a salsa that your family likes.

2 cans rotel
1 minced garlic clove
1/2 of a small onion
handfull of cilantro
My husband loves salsa, especially in the summer. He works outside & I think chips and salsa replace what he loses in sweat.

All these salsa recipes sound good! This is how we make it:
3 large cans whole tomatoes
1 bunch of green onions
1 bunch of cilantro
2-3 jalepeno peppers, boiled until fork tender (this takes away the bitterness of the pepper, but leaves the heat
I pulse everything in the food processor until it is the consistency I want. I don't always pour all the juice from the tomatoes in at first, and just add it in as needed for the desired consistency. I don't even add salt, usually, because the tomatoes are salty enough.
I used to put garlic and lime in it, too, until one day when I didn't have any, and we discovered that we like it better without!
