I had tuna and boiled eggs out to make a tuna salad.

Dh just called. He feels like frying fish tonight. So I took out two packs of fish.

Figured we'd replace grilled cheese lunch w/ the tuna salad only Kayleigh called saying she was stopping at the Chinese restaurant after her last college class and did I want shrimp lo mein. Hmmmm...

We are not supposed to be during Lent.

we've been planning rice and beans (pinto) with cheese and tortillas (basically burritos but that's not what oldest asked for ) gonna start the beans soon.. and have the rice leftover from earlier in the week.

I bought "Fish and Chips" from Costco!! Have been craving this since Marianne mentioned it on her blog a few weeks ago. Poor dd who is allergic to fish will be sorting out her own dinner!!

Trying polenta for the first time. My husband is away until Sunday and two of the older children are busy tonight so I thought I'd feed (experiment) to the rest of us. I've already made it and I'll fry it crispy for supper. That and carrot and celery sticks.

We had polenta for lunch with a yummy broad bean with tomatoes and spices that our Priest gave us.

Dinner looks like roasted root veggies and leftover 3 bean salad!

roasted fingerling potatoes (5 varieties! thanks Sam's Club!) with olive oil, garlic and rosemary
breaded cod
broccoli or green beans
this is actually a treat- as we've been heavy on the beans around here lately!!

the cub and boy scouts in the family will head up with dad to the tail end of the fish fry at church, they clean up afterward, and they usually get some leftovers, too!!

We just had "Mexican Lasagna". Basically its alternating layers of flour tortillas, then refried beans, then enchilada sauce, then cheddar cheese, then all the layers over again, baked at 350 for 45 minutes or so. The kids love it.
