The plan for tonight is soft tacos with ground beef and all the fixings.....cheese, black beans, lettuce, sour cream, salsa, corn, black olives and maybe some gaucomole for me.
We might be eating in shifts, dh and Carter are planning to get fitted for their tuxes tonight, we are volunteering at the Leukemia Ball again this year.
I just found out that our spring sport practices start next week , so I am going to enjoy our last few nights of calm.......whatever that is

Mary Chris, are you looking over my shoulder? We are also having soft tacos with ground beef and all of the fixings. Except we are having pinto beans (homemade...the refried beans over here taste funny to me). I think I will use Maryan's recipe. And Mary M's homemade tortillas. My family is spoiled since I made these; best go and mix them up!

Mary Chris, it is not Maryan's recipe, but Rachel May's...more of advice on how to cook pinto beans. Check out this thread on meatless dishes. It is at the bottom. There is a great discussion about soaking/not soaking and when to salt (a very valuable tip to know). Sorry for the confusion. I met you all so briefly at the conference. And I am getting older. And forget ever soaking the beans. I am not that organized!

yum...soft tacos sound delish! I'm adding that to my panic list on my menu for this season - how could I have forgotten that one?
For dinner tonight we're having meatballs, rice, and gravy with whole grain mustard for topping meatballs, lima beans, and ceasar salad.

We're having Jennifer's (Mackfam) recipe from last night. COTIB. (Don't have time to link right now. Sorry) Tomorrow it will be time to re-load, got to make room. Plus we're having brunch for 22 on Sunday morning/noon in celebration of 2 birthdays. Definitely need space for that!!

Rachel came to my house one day and taught me how to fry tostados and we had those for lunch. It was delightful. We've done homemade corn tortillas, but it's been a while, since the fried shells are the preference here, and I have a fear of frying, especially since a friend's recent grease fire.
We're just having leftovers. Our tacos will be tomorrow, with tunafish.

LOL! Carole, I was still pondering: Hmm... is she putting my vegetarian chili in a soft taco. Hmm.. that might work. I didnt' read close enough to see it was a recipe for refried beans! Yep that's right up Rachel's alley!

Okay, so don't laugh! It *is* my first time to make refried beans in a very long time (and I never was very successful; so much easier to open a can)! So stupidly, I poured out most of the liquid. So I have about half the pan nicely smashed (boy, does the water make a difference) and half of the pan is whole beans. That is probably okay since dh likes them that way. What an adventure.
Hey Jenn, tuna on tortillas sounds very yummy. And so does making the corn tortillas, but I really have to guard my cornmeal over here. I cannot find it in the stores, so I save what little I have for cornbread.

salt doesn't make the beans tough as long as they're cooked.. and salt and acid can keep beans from cooking sometimes..
When I cook my beans I add onions early on so they cook down and vanish.. and I add a bit of mexican seasoning (cumin and oregano) so just mashing them in a pan (mash after they've warmed up) makes a great refried bean.
As far as dinner tonight.. haven't figured that out yet.. guess I should investigate the fridge for leftovers that need using and go from there.

That's interesting. Is corn still very American? I know peanut butter is.
I'd love to serve the soft tortillas here, but we can't. Enjoy one for me!

Jenn, I wouldn't say that it is American (well it is). Much to my surprise, I found it in Lourdes at the grocery store. And it may be available in other parts of England. But I find that the stores in Wales are more limited to the food that is found in the United Kingdom!

It was mexican night here. DH and I had hard shell tacos and the kiddos had bean and cheese quesadillas. We also had salad and fruit.
