Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Starting this for Mary Chris this morning...and I confess I miss hearing what Mary Chris's family will be eating tonight!

This is going to be a busy day for me with things to do out of the home this afternoon...and, it's my market day...so, my dinner is likely to be a pizza I grab from Costco on the way home.

What I really want to do is come up with an idea for a meal that celebrates a saint to whom we have a special devotion whose Feast is today -
St. Dominic Savio. Does anyone have any ideas? Something Italian maybe?

What are you having for dinner tonight?

We are having meatballs and spaghetti, green salad (lettuce is ready for harvest in the garden--so lovely), and garlic bread.

Breakfast granola is cooling now with fresh strawberries and blueberries to top it off.

For lunch today we'll have mac n cheese and turkey slices.

Hopefully homemade soft pretzels at tea time...depending on mom's energy level.

Dinner tonight is pork loin steak. I am not certain how I will prepare it, but I will probably saute with some seasonings. I plan on serving mashed potatoes and green beans.

I've got pork chops to use and I can't think of what to do with them. Any ideas?

Update: Maybe Italian Breaded Pork Chops

I'm thinking chicken and dumplings since my dh requested that.

Just finished making my menu, a day later than I wanted. This is a new practice for me, and I find it hard to commit to paper. Usually I plan in the store with what's on sale and what sounds good.

Nothing Italian for me, just Broiled chicken and brown rice, salad and veggies. It's #1 child's favorite chicken, and it's easy and quick, since this is market day for me, too.

Charlotte, that's my favorite way to have pork chops.. I skip the egg though.. the crumbs usually stick to the meat without it.

But they come out so yummy and moist..

Poppy Turkey from the Frozen Assets Cookbook.

Red sauce with ground turkey over pasta that is mixed with a poppyseed/cheese mixture.
