Tonight we are having cracker chicken, green beans and a salad.

This morning we had a oatmeal or yogurt and I also made a batch of buttermilk blueberry muffins and chocolate ricotta muffins. I hope they carry us through the week.

Lunch is hot dogs for some and salad for me.

Breakfast - oatmeal and mangolicious smoothies (awesome new frozen fruit mixture from TJs)

Lunch - rice pasta with chicken bratwurst and peppers

Teatime - 5 year old birthday boy wants a tower cake made out of Dunkin Donuts (suits me as he originally wanted a pirate ship cake that I was agonizing over), Baskin robbins Rainbow sherbert, and party hats!!

Dinner - birthday boy wants Pizza Hut - again a nice break for me!!

Well, I want you to know the alternative use of this thread. I had some leftover smothered chicken in my fridge the other day and I couldn't remember how old it was. Then I remembered I had posted about it.. so I went back on these threads to say what day that was... I thought my dh had taken it to work for lunch last week but he hadn't.. yuck!

Pitiful, I know...

I use to keep an extra calendar on the kitchen wall to write what we had for each nightly meal... I need to go back to that...

We'll be having cubed steak, browned in the skillet with a coating of flour, and then put in the crockpot to cook with some Italian style diced tomatoes and some other herbs thrown in. Probably brown rice on the side and our usual salad...

Breakfast was a hearty pot of steel cut oats (thanks Marie!) and choco-peanutbutter smoothies.

Lunch is leftover lasagna and garlic toast

Dinner will be Beef Stroganoff and salad that a lovely family from church brought us. (oh, yeah, and mint chocolate brownies!)

We have FOCUS team dinners on Monday nights and I always prepare them.
Tonight we're having a spiral ham and pasta w/pesto. I need a veggie too...but I'm not sure what. Thankfully I'm also off the hook for dessert since they are fasting from anything sweetened for the week.
I love these threads, even when I fail to actually post!

Meatloaf, and some vegetable. It's the EASIEST recipe for meatloaf, and my DH's favorite. His favorite part is the melted cheese on top at the end. LOL

Our 11 year old daughter was on dinner duty tonight...she made mini-meatloaves, buttered noodles and broccoli...all on her own! She even baked some cookies for dessert!

Ah, but it is nice to enjoy the fruits of our labor every now and again!
