Sorry - this may seem like a pretty stupid question - but....

I have only used orange zest a couple of times and I don't ever remember being able to see the orange bits in past recipes. But, this weekend, we tried a new recipe (and a new zester - the one from pampered chef) and the bits of orange were about 1/2 inch long, but maybe 1/8 inch in width. The bits were very visible in the cake and because of this, several of my daughter's friends didn't want to eat it. Is it normal to see the orange bits after the recipe has been cooked.

it's normal if the pieces are big enough.. you might want to use shorter strokes so that you don't get such long strands.

If the zest pieces are long, you can always mince them before you add them to the recipe. Depends on your zester -- when I want the long strands I use a regular zester. When I want hints of it all over the finished product I use the rasp/Microplane grater so it comes out very fine (more work though).

Stef, you beat me to it! I was going to say exactly the same thing! I noticed the same thing, so I used the Microplane Adjustable grater for that very reason!

I don't ever remember seeing the pieces of orange in any cooked items before. So, it doesn't "dissolve" while being cooked, even if it's very fine?

Next time, while serving little ones, I'll be sure that it's not visible.
