Other than Legos. We really don't need any more Legos.

lincoln logs didn't work here so well.. I've considered tinker toys
Zome is definitely worth a look
And I think there's another post around here with something I think was called planks.. that looked interesting too.

Kapla, without a doubt!!!
For the two and under crowd, these. They are expensive, but great for little hands.

Personally? Tinker Toys. My kids have other ideas. They like K'nex, but if they can't have Legos, wooden blocks win, hands down. (They combine especially well with Brio or Thomas the Tank Engine wooden railway sets!)

I second the rec for Kapla or Keva blocks ... they're pretty much the same. Basically, they're planks that replicate the "golden rectangle"; JP got a set of Keva last year, and EVERYONE has had fun playing/building with them ever since. It's such a simple concept.
I also like the old-style Legos and Santa will be putting the anniversary box under the tree on Christmas Eve! These are the blocks I remember -- where we had to use imagination because we didn't have figures or slanted pieces, etc. It was great!
I also like K'nex (altho we got rid of a ton before we moved from Denver and I don't want to start those again). Lincoln Logs are also tons of fun (altho I sort of think of those as "period" play when we're studying frontier days ). I also find that we never have the right pieces to finish what we have in mind.
TinkerToys were short-lived around here ... the boys preferred the k'nex.

My son loves the Kapla blocks as well. We are going to be adding to his collection again this year. It is his most frequently used toy.

Wow, Mary, thanks for pointing out those classic Legos! My brothers had those when we were younger, and I've been trying to find them since forever. All I could find were specific themed Lego sets. Now I know one gift for my kids this Christmas.
The other building set we like here is just the basic natural wooden blocks. I might get my son something similar to these castle blocks for Christmas.

I posted the blocks we love on my blog a few days ago:

For 3-5 yo, Discovery Toys has a thing called "Bright Builders" that are cool. My older boys (6-10 yo) love Bionicles, which are Lego robot things. They come in sets but you can make your own robots, too.
Lincoln Logs get a daily workout here, as do our Cuisenaire rods. Everyone wants to play with them and I have to confiscate them for math lessons!
