I haven't done it, but I have been thinking it would be good to take the recipe from this thread

Chocolate Mug Cake

and make a mix of the dry ingredients (or even modify it to have dried milk and possibly eggs if that would work) and package it to put it in a coffee mug as a gift.

We've made this several times since posted and it is yummy!

This isn't exactly a mix, but I'm planning to give homemade granola. The base is a recipe from the Tightwad Gazette (which I'll have to dig up), which we eat daily, and I'm planning to dress it up with dried fruit, almonds, etc.

The previous owner of our house left boxes and boxes of Mason jars of all sizes in the attic above our garage, and I found some nice big ones today, so that's what we'll be packaging our gifts in this year.
