What is it, and is it neccessary to successful bread machine bread? The recipes that came with my machine specify bread flour...do I need to buy it?

Hi Noreen, bread flour is simply a higher protein flour. You can buy those that specifically say "bread flour", or at least get UNbleached, UNbromated flour (King Arthur and Gold Medal and Pillsbury I believe all have such a flour in their respective lines). You can use all-purpose flour (about 2% lower protein content than bread flour) but you'll get better results with bread flour (12-14% protein)

If you already have all-purpose flour, what you can do is add "vital wheat gluten" to increase the protein content.
