We have entered the world of extreme low carb cooking at my house. My dd's dinner tonight included buttered pork rinds- and before this I had never touched a pork rind in my whole life (but, you know, they're pretty good). Anyway, it's a whole new and strange way of cooking- time consuming as well as we have to measure and record all she eats.

I know it will get easier, but could you please offer up a prayer for us to the Madonna of the Kitchen as we adjust? My ds especially is having a hard time with the change in the menus around here and all the extra time in the kitchen.

This issue has been and continues to be the hardest thing for me to overcome - my own comfort zone in the kitchen in favor of a healthier way of eating! I'm praying - that you can change your focus in the kitchen, and that this form of culinary change can bring about some other positive changes with your dd's health!
