I know, total last minute, but DH just got his paycheck.
EVERYONE is coming over tomorrow (breathe, breathe) for my dniece's first b-day.
2 people are diabetic, 2 people are allergic to dairy, 1 is allergic to soy, 2 are vegetarian, and the baby has never had refined sugar, dairy, or wheat.
They will likely have breakfast/brunch before coming. So, it can be "lighter" fare.
I was going to do fruit and veggie trays.
Any ideas for some other stuff to serve (or to liven up the veggie/fruit trays?) And any dip ideas for either?
Anything else?
Any suggestions are great. I am so glad that stores are open 24 hours here. DH will stop on his way home from work tonight.

I have handled diabetic, allergic to wheat, eggs, and dairy.
Guacamole is a good idea. Get closest to the avocado -- read labels, because add dairy. Chips and salsa are always a big party pleaser. You could get the organic or natural kind of corn chips, reading the label for soy.
Hummus is usually safe for the soy. Or some kind of bean dip. Some nice low carb wheat crackers might work well with this.
What to use for dipping can be a problem. For the diabetic, at least when I was, I had lots of celery sticks, so I could dip and only the dip was carbs -- celery is "free" food.
You could also do dairy free tomato bruschetta, on sliced bagette?

Just tonight we tried this dip and it was a hit.
Are you looking for more than fruit and veggie trays? What about soup?

Or some kind of green salad! You could also make "fixings" for salad in small bowls and allow each guest to put on the salad what they wish: bowl of spinach or lettuce leaves, then some mushrooms, sliced hardboiled eggs, precooked chicken, small cubes of cheese, green onions, chick peas, kidney beans, broccoli, marinated artichoke hearts...
Then people can choose what their diets can handle. Dressing could be as simple as olive oil and wine vinegar.

I am asked for this recipe every time I take this dip to a gathering, and it couldn't be easier.
Texas Caviar
can garbanzos (chick peas), rinsed and drained
can black beans, rinsed and drained
can of corn (or use whatever you have fresh or frozen)
juice of two limes
2 avocado, diced
jar salsa (get a good one)
fresh cilantro
Toss everything in a bowl and combine. Serve with chips.

Thanks for all the suggestions!
Well, Jenn....It wasn't horrible. Which is dramatically better than it has ever been before.
We did find out just minutes before they were coming that more of his family was in town and they had invited them along too. After I hid in my walk-in closet for a little bit and ranted where my kids couldn't hear, I was then able to compose myself by the time everyone arrived and it went well.
It helped that I was finally able to hold my one and only niece, and she is just turned one year old snuggle bug. Baby hugs are the best!
I then told DH that I needed one of those!!!
they leave in four more days.....
