OK, so I pulled out my book last night because I want to do the blender batter muffin recipes.

But I feel weird about the idea of leaving the grain in *buttermilk* on the counter overnight! Is there no chance of getting sick on warm dairy products????

I've made kefir- leaving the kefir grains in raw milk on the counter for a day or two and we've never gotten sick from it.
We also have done Amish Friendship bread that has the starter unrefrigerated for 10 days consisting of milk, sugar and flour- this product has also never made us sick.
I'm not sure that there's NO chance of getting sick but, from my experience, I'd guess it's small.
I think the idea behind leaving it out is that it will allow for some fermentation where refrigeration won't- but that's just a guess.

I have soaked oatmeal with yogurt over night many times and haven't gotten sick. However, I would tightly cover it with a cloth to prevent dust and flies from getting at it.

As long as the milk is cultured or acidic in some way, you should be fine. Buttermilk works as does live cultured yogurt or even regular milk mixed with either of them.

We definitely noticed a difference between regular and fermented grains both in how filling, how long we are satisfied--as well as "digestive issues" like gas and bloating afterward.

Flies and things shouldn't be an issue in the blender recipes with a lid, but we do always cover it like Betsy.

I do this too, but I never have buttermilk on hand, so it's always thinned yogurt for us!

Acidity + the fermentation will keep you from getting sick. I wouldn't try it with plain homogenized milk, though!
