My mom has made this pie for my dad for years! It's diabetic friendly and since it doesn't require baking, it's great for the summer.

Ingredients:

    * 5 medium Granny Smith apples, peeled and sliced
    * 1 3/4 cups water, divided
    * 1 small package sugar-free lemon gelatin (4 serving size)
    * 1 tsp apple pie spice (or 3/4 tsp ground cinnamon and 1/4 tsp ground nutmeg)
    * 1 small package sugar-free cook-and-serve vanilla pudding mix (4 serving size)
    * 1 reduced fat graham cracker crust (8 inches)

Directions:

In large saucepan, combine apples, 1 1/2 cups water, gelatin, apple pie spice. Bring to a boil.

Reduce heat to a simmer. Cover and cook until apples are tender - about 4 - 6 minutes. Stir occasionally.

Combine pudding mix and 1/4 cup water. Add to apple mixture. Stir and cook for 1 additional minute, or until thickened.

Remove from heat. Pour into prepared crust.

Refrigerate no less than 2 hours before serving.
