I'm pregnant with our 5th baby and now seems like a very good time to improve my eating habits. After my 1st baby was born, I learned a lot about nutrition and was really good about getting plenty of fruits and vegetables into my diet. I've been slowly backsliding over the past 5 or 6 years and now I'm back to eating fruits and vegetables only sometimes.    I think part of the problem is that I'm tired of the 'same old thing' when it comes to vegetables and when I'm pressed for time (which is often), I leave out vegetables and fruit, b/c they require more preparation time.

How do you make sure you're eating plenty of healthy food, especially during pregnancy? How do you get in your leafy green vegetables? Anyone have easy, fast vegetable and fruit recipes to share?

At least, fuss at me and tell me to eat right!

I've heard (I'm not there yet) that if you prep things as much as you can right after you buy them.. washing and seperating lettuce for instance.. so that you can just grab it from the fridge and eat it.. that it's easier to eat more than it is when prepping each thing as you go.

I have to be honest, I love the new-ish steamer bag frozen veggies. I don't know why it makes it easier for me, it just does, and we eat lots more veggies due to them....

I can't eat raw due to IBS, so steamed is the way to go for me. I love the blend with the water chestnuts.

No good fruit recipes. All my good fruit recipes add in lots of not-as-good stuff (so actually they are GOOD just not the kind of good you mean... )

It looks like you have some older helpers? You'll get the most vitamins from raw veggies...I had my older two cut up lettuces every day as I was for a long time. It only took a minute or two to chop in the extras for 2 salads a day. I had my fruit in smoothies, which only takes a minute, too. Add a good quality yogurt or protein powder, and then frozen banana, strawberries, peaches...whatever appeals to your pg tummy, and enough juice/water/milk to get it to the thickness you want. If you have a good blender, you can also add in a carrot to your smoothie. On a super day or just really busy, you can always have 2 smoothies. I also ate a lot of grapes...easy to wash in the sink and keep on the counter to snack on.

My dd is 9 and she asked the other day if she could have the "chore" of preparing a tray of fruits and veggies each morning so they are ready for snacking. She loves to cook and prepare food. I said sure! I just have to make sure I buy it so it is on hand.
That's the big issue here - buying it. Produce, even the non-organic stuff is really expensive. Our eating habits have changed for the worse because of the expense.

We will wash a head of romaine lettuce and stick it in a bowl on the counter. We don't cut it up, just pull it apart. Then we grab a leaf whenever we go in the kitchen. We look like a bunch of rabbits, but it works!

Your oldest can easily wash a bunch of grapes or strawberries. My 8 yr old has just started cutting up veggies for salads. It makes me a little nervous but she is very careful!

Oh, I never thought of having my 9yo cut the veggies up...I bet she could do that. She is always begging to help me when I cook, but it makes me nervous to see her cutting w/ a sharp knife! I'm SURE she could handle cleaning lettuce, though. I bet my kids would eat it like rabbits if I left it out, too.   

I will have to check out the steam bags, too.

I know what you mean about the expense of fresh produce, Becky.    I've been using more frozen vegetables for side dishes, but I don't think they taste as good, and therefore, don't eat as much. My kids hate most veggies I cook, too. My 4yo tells me that green beans and broccoli are "poisonous."
