I made this for dinner. It was so, so easy, and everyone loved it. (I can't have dairy, so I couldn't eat it, but I almost did anyway, cuz it smelled SO good.) It's a crockpot recipe, and took me all of maybe five minutes to put together.

So Laura, I found the link to the Crockpot Lady (definitely a resource to keep in mind) and I read the comments, did you have any problem with curdling? I really want to try this soon. Thanks.

I didn't have any trouble with curdling....(I never read the comments on the blog, as I didn't know where the recipe came from before I wrote the blog post.....) I am glad I didn't read it - I probably would have hesitated trying it!
I did use full fat milk and cheese. I started it on high for just a little bit, and then cooked it on low....(my pot is persnickity) and it didn't need very long to cook - maybe 2 hours - and that was on low. I also did stir it once (I am really bad about leaving crockpots alone - I must stir!!! .)
Oh, dear, I hope no one has a problem with it curdling! I would feel bad!

I made this and used 2% milk and full fat cheese. No curdling here! It was yummy and creamy.

Oooo this does sound like a wonderful, no heat up the kitchen option for us ... we'll try it next week and I'll let you know re: curdling...

I tried it last night. . I used a whole box (14.5) of Barilla multi-grain pasta (about 2.5 cups), 4 cups of milk and 2 1/2 cups of full fat cheddar cheese. It came out good. No curdling here. I stirred about every 30 hour. It took aprox. 90 minutes to cook. I made the mistake of adding some Dijon mustard because I was out of ground mustard. I think it would've been better without.

I didn't use mustard in mine - I wasn't sure what you were talking about until I saw that it was listed in the original recipe.
hhhmmm, I wonder how that would change the taste. Since they liked it w/o I am hesitant to mess with it
Gosh....I have no idea how to go about doubling it, sorry!
I am curious as to how the gluten free noodles would work, too.
Goodness, I miss cheese. I can deal with not having most dairy with no trouble, but, wow, do I miss cheese....:(
