scrambled eggs cooked in a double boiler until creamy and just this side of done. top with chopped crunchy bacon and chives. yum.

Do you mean how do I make popovers so that there is room to fill them or something else? I am sorry, but my brain is a little overheated today.

I have a very basic popover recipe that came from the Better Homes and Gardens cookbook. I use a muffin tin as opposed to a popover pan. They seem to cook up hollow inside although not always nice and round on top... sometimes they come out with flat tops but they are still nice an tall enough to stuff with bits turkey and cheese for lunch or add some cinnamon sugar and honey for a breakfast treat. The recipe is:

2 beaten eggs
1 C. milk
1 TBL oil
1 C. flour
1/4 tsp. salt

Whisk eggs, milk and oil. Add flour and salt. Beat until smooth. Fill muffin cups 1/2 full. Bake at 400 for 30-40 mintues or until very firm. Immediately prick with fork to let steam escape when you remove them from the oven.

I have never made them with chicken salad before, but Husband thought it sounded good to him. I use chicken, red grapes, celery and mayo. I bet he would like the breakfast popovers too Stef. Maybe I'll surprise him with those!

This sounds very delicious! I make chicken salad with a recipe similar to yours and my husband would love it in a popover! It is sooooo hot here in Texas, isn't it? I am limited in what appeals to my pregnant palate and the heat limits me in what I want to prepare so as not to heat up my house!

My recipe produces a more savory popover. Would I just add sugar to make it a dessert flavor? Any idea how much? And how do you fill it with chocolate (melted, chips, etc...)? Can you tell that you peaked my interest?

any of the other sandwich fillings like tuna salad or egg salad

maybe things without meat? like hmmm coleslaw? or macaroni salad? something you wouldn't think twice about eating with a bit of bread on the side.

My recipe is different than yours, and I use a popover pan.

1 1/4 c milk
1 1/4 c flour
1/2 tsp salt
3 large eggs

Pour milk in bowl. Add flour and salt. Beat with wire whisk until well blended. Add eggs 1 at a time. Pour into popover cups about 3/4 full. Bake at 450 about 15-20 minutes, then reduce heat to 375 and bake another 30-35 minutes until golden brown.

Meanwhile, I'll melt chocolate chips (sometimes with peanut butter) on the stove.

I take the popovers out of the oven, open to let the steam out, throw in a scoop of vanilla ice cream and pour the melted chocolate over the whole thing.

Yum.

Yum.

Yum.

I've also just dipped the popover in the chocolate and eaten it.

OR...dip the popover in melted butter and then in either sugar or cinnamon-sugar mixture.

Your tongue will love you, your hips not so much.

When I was a kid, we used to fill them with pudding, like chocolate or "custard" flavor and some whipped cream (from the can!) My sis and I call them "white trash eclairs", but yummmm.....
