I've read the previous threads, really!

Just got a yogurt incubator & made our first batch yesterday. I think it turned out fine, but it was so tangy. Generally speaking, is it better to sweeten or flavor it before or after incubating? Could I add a sweetener (like brown sugar?) to it before putting it into the incubator?

And the whey - how do you use it in bread? As a substitute for water, I'm assuming? TIA.

Always sweeten after incubating! And maple syrup is pretty tasty in yogurt and healthier than brown sugar.

I've always heard to sweeten after and I aways do. I find that home made yogurt is more tangy than shop bought, but we got used to it quite quickly when we started making it.

To make bread with the whey,add the whey after you see slight bubbling from the yeast.(When the yeast sits in the water,sugar,and salt)Then proceed with the rest of your ingredients to finish the bread.The bread will have a slight tangy flavor,but is more nutritious and also more filling.

Yogurt gets tangier the longer it ferments. If you leave it overnight you will get quite tangy yogurt, but in 4-6 hours it will be a little less tangy.

We always use the real Maple syrup to sweeten our yogurt and do it as we serve it.
