My hands-down favorite anatomy book is called The Body Book. With this book you cut out and put together a paper model(about half-sized) of all of the body systems.Plus a few other paper models. Lots of fun and very educational.

I think Usborne has some good titles. The only one I can think of off hand is See Inside Your Body. It has lots of details with lift the flaps that really are made for older children as they are small and well...detailed! But there are bunch others they carry too.

Seconding the Body Book. Our "body" is named Skelly and still referred to fondly after a year or so. We read through Blood and Guts at the same time.

I was going to recommend the Body Book and Blood and Guts. There are also some books by Seymour Simon on Lungs, Guts and other titles. They were featured at Barnes & Nobles recently, a buy three get one free deal, I think. I have a whole basket of anatomy books, come on over and take a look.
