My son is turning 4 next week. He wants mac & cheese. I've made the box version by Annie's, but have been looking for an easy & healthy homemade recipe. He's a real simple little guy. No fancy stuff needed in the dish. Just good old mac & cheese! Any good ones out there?

I just toss cooked macaroni with cheese (either small dice or shredded) and put in a casserole dish.. pour milk to cover the bottom.. cover and bake until it's all melty.. take off the cover and let the top brown if you like.

Mine's all stove top:
-cook 2 cups macaroni
- drain
-in empty pan, melt 2 or 3T butter
- I sometimes chop onion or add garlic - this is optional
- add T flour
- add 1 1/2 c. milk
keep stirring till bubbly
- add 2 c. shredded or cubed cheese (I've used anything from Velveeta, to Mexican to Cheddar)
-Stir till melts
-throw the macroni back in, stir and serve
- add salt and pepper
I don't do the oven part - but some people bake it.

I have done the basic mac and cheese like Maryan. Only variation I can add is one I got from a college roommate- add a tablespoon of cream cheese. I don't always do it, but it is yummy.

Mine is the same recipe as Maryan's....sometimes I bake it, but not always. For some extra nutrition and taste too, I will add pureed sweet potatoes, carrots or squash. Sometimes add dry mustard or paprika.

Stacy...Add cream cheese to anything and I'm a fan!
Suzanne...I love the idea of pureed sweet potatoes. My son doesn't dig veggies or casseroles. This might be a way I can sneak in a veggie! The only other way has been through smoothies!

Our favourite recipe is so simple, you don't even need to drain the pasta This is how my son dictated it for me to post on our blog when he was 7yo. Gotta love a recipe with personality
"This is my favourite 'smack' n cheese recipe. Mom can't remember where she found it, but we all love it a lot. It's my special lunch that I like to ask for.
2 cups of water
1 cup of milk
bit of butter or oil, whichever you like best
Boil these and add 2 cups of whole wheat macaroni. Make sure it's whole wheat, or it won't be as healthy.
You have to stir it a lot so that it won't stick. It has to bubble a bit, but not crazy boiling.
While it is cooking, grate 2 cups of cheese. I like the un-coloured medium cheddar from the cheese factory near Grandma's. I don't know if you can get there, it's near Perth and the ice cream store.
Then when almost all of the milk and water are gone and the macaroni is soft, put in the cheese and stir it until it's all melted and saucy. I like to add some parsley and pepper, and Gracie puts in a bit of garlic powder. However you want to eat it, just eat it! It's great! I even have the recipe memorized so that I can always eat it when I want to."

I just make a white sauce and add cheddar. In goes the cooked noodles and then if I want to go fancy I put it in a casserole dish and put more shredded cheddar or buttered bread crumbs on top and stick it in the oven for 30 minutes.
