We're having a few junior girls from the local college for lunch tomorrow-Tuesday. They weren't able to get home for Thanksgiving, so different church families are having them over for lunch of dessert throughout the week. I totally forgot about it until now. I don't know them that well and I don't feel inspired about what to make. Do any of you have ideas or suggestions? For our own lunch I usually prepare simple meals from scratch (think Pb & jelly) but I'm just an average cook and our lunches aren't something I would offer guests.

Could you throw a couple of chickens in the oven with baked potatoes? Season the chicken with butter, salt and pepper, put the potatoes in with it and your free until it's time to serve lunch. Maybe add a salad?

No bake cookies are easy and so good too!

How very kind of you to open your home to them. We had friends open their home one year to a couple of soldiers unable to go home for Christmas. The soldiers so enjoyed it they asked to come back for New Years!
