Well, this is not exactly a unit study, but since there don't seem to be a whole lot of materials out there....

CHC has a retreat "Its a mystery: the Holy Trinity" which has various activities. I haven't seen these retreats, but it might be worth looking at.

Other ideas--go through the Rosary Mysteries and identify which and how the persons of the Trinity are "present" e.g., baptism in the Jordan--all 3 are there; Annunciation, all 3.

Find the verses in Scripture which tell about the 3 Persons. There are "hidden" ones too, like the 3 angels coming to Abraham.

On the Holy Spirit, you could look at some confirmation prep materials which wd cover that in particular--like the gifts and fruits.

Discuss the Creed, eg., why does it say "spoken through the prophets", and the CCC section on this.

I'm sorry if that's not much help. There really don't seem to be many materials outside of Catechetical ones on this.

I'd love to know if anyone has used those CHC retreats and what they think.
